This one could have gone for three hours and I would have sat mesmerized - Kush is absolutely amazing at taking these recipes and making them so accessible. Ebbers is the same. It’s like the best kind of class you could ever attend. And I LOVED it when Kush got Jamie to come up and do the step he wasn’t sure about. Kush is just special - you almost…ALMOST forget what a fantastic troll he can be too!
@@jacquesbacques8706 (Sorry, I'm not a Sorted chef) But yes you can spatchcock a turkey. Makes it much easier to cook quicker & more evenly. It can make large birds too wide/large to fit in a home oven though. You may want to cut it in half down the middle & cook it on two levels, swapping them about. With a bit of practice (practice on chickens - they're cheaper) you can totally bone a turkey in one piece. Then stuff it & it makes for easy roasting & simple carving at the table.
Im a big fan of these more intimate videos where there's no challenge or anything, just a skilled chef like Kush going through the process being able to answer questions on the fly and showing tips. Lends to a very relaxing watch where you can absorb the information much easier!
Kush is such an effective communicator, it really does feel like being in a class watching him work. We’re blessed with the opportunity to learn from him
I think he is very alike with Ben in that regard as it feels very nice to listen to both of them explain and for normal homecooks it is very educational. There just seems to be more shenaniganery occuring around Ben.
The way Kush educates while cooking is amazing. The way he pulled Jamie over to give a close up demonstration when he expressed his issue with making brown butter. Real dad vibes.
That's how chefs work. As soon as a stage or commis expresses hesitation over a technique, the sous chef puts them in charge of that technique. A few supervised attempts, and they're off. I've worked in many high-end kitchens (I might have met Kush at Manoir, though my memory from those days is hazy), and the best ones always use that style of teaching. The worst chefs are the ones who gatekeep.
You struggle with it? Wanna come and make it? Thats the kind of mentor you need. Love how he can be so calm and soothing and yet such a whirlwind at times 😂
I’m going to be so sad when this series is over - not that I’d expect y’all to keep up with this pace of content, but it’s been so nice to come home from work every day and have a Sorted video waiting! 😊 thank you everyone there for this incredible season!
If you have a look around RUclips there's a couple of videos with Kush from his time at Raymond Blanc & at least one of Monsieur Blanc cooking one of Kush's dishes. A vegetable curry IIRC. Chef Blanc seemed to really like Kush & has high hopes for him.
I know what you mean, but this channel has more influence and has more reach than any traditional tv outlet for which I'm aware. This is astonishing content, truly. I'm reminded of watching Julia Child in my childhood. There's something about her that was magical, like watching a wizard master create something amazing. This channel, especially with Kush and Ebbers, frequently matches that level of magic for me. This video is definitely at the top.
Kush has the loveliest "teaching" demeanor... confident, friendly, engaging, a soothing speaking voice... I could listen to him demonstrate recipes all day... and maybe even learn to cook!😊
This advent calendar has been fantastic guys! You have spoiled us this year! Its gonna be rough to go back to regular uploads but the experience has been fantastic😊😊😊😊😊❤❤❤❤

Watching Kush cook is an absolute joy. He is so calm with explaining everything and why he's doing it, showing you in-depth what's going on. Maybe you guys should think about making a new cookbook or app that highlights more indulgent dishes, things that would make people say "Wow!"
Go Kuuush! Love that he has gotten more screen time! He is a natural teacher and his calm yet silly demeanor is so nice. Also appreciate that the music here fits his presentation style.
Fond memories of my late husband who was a chef. Give him time, money and unlimited kitchen access and you never knew what wonderful food you'd be eating! Good job, lads. 🎄

Always cooked a whole turkey, for over 35 years and never had any issues, never done what Kush has done, always cooked covered in tinfoil and removed the top of the foil around 45 minutes before it is finished cooking to baste and brown the skin. Maybe because doing what Kush did would be totally out of my comfort zone and skill. Please Sorted Food MORE Kush, he is incredible in his skills and knowledge, it is on another level.
For kush to fo from someone who wasnt sure whether he wanted to go on camera to putting out this masterpiece thats held attentio for 30+ mins etc is amazing
I love how much Jamie is just loving this. He just seems to be having the best time. And I don't blame him. x3 I like this energy from Kush a lot too. This could be kind of a fun series, honestly. Kush just being in his element, getting to be a little extreme or over the top but also educational, but doing what he does best.
Hands down one of the best videos you’ve done in ages. Kush is great on camera, and it’s bare (luxury) bones cooking which is why we all followed you all those years ago!! The review videos etc are fun but the best videos are ALWAYS the ones where you guys are cooking! Please more of Kush’s peaceful, controlled cooking! Love it ❤
Kush has been a great addition to the Sorted team! I love the fact that he is kind of a smartass, but you can tell that he really does enjoy cooking and helping people learn to become better cooks. I would have never of thought to do something like this, but I'm thinking I may give something like this a try now especially the way he did it at home with the boneless skinless chicken thighs.
I appreciate the role Ben plays on these videos, asking the right questions for us. I love this format. Great job, guys. I am going to miss the daily videos, they were a lovely present, thanks.
Must be a blessing to be friends with 3 chefs (including James) always eat at high level. Even if they don't cook themselves they have great restaurants recommendations.
i love kush. the man contains multitudes. he's simultaneously chaotic/unpredictable and an incredibly thoughtful, even-keeled chef -- plus he seems to have a passion, or at least an aptitude, for teaching. i'm so impressed with the way he relates to the normals and explains things to them (and, by proxy, us). in this video specifically, i liked that he mentioned to jamie that the herbs would sputter when they went into the brown butter, because that is EXACTLY the kind of thing i don't have the intuition for when cooking. like, i'll figure out "right, herbs have water in them, water + hot fat = sputtering," but it'll take me a few seconds of absolute panic before my brain gets there. anyway, loving all the kush kontent (™) recently and i'm glad you guys have gotten him to spend more time in front of the camera! he's a delight.
A video a day with each video delivering excellent content. Kudos to the whole SortedFood team for the hard work. Words cannot express how thankful we are for your brand of content. There is no other like it!
I love how Kush is pure chaos when needed but also is a fantastic teacher bringing Jamie in and being patient and explaining exactly what they are doing, why and made sure Jamie understood before moving on
Extremely informative episode, and I loved the questions from Ebbers on the sideline! Little bit "leading the witness" to make sure that Kush comes around all the important info, like cooling down the turkey leg roll, very nicely produced! Good job guys!
65yr old again with egg on my face after reading some of the comments. They are right I should be ashamed for not giving all of you praise.Kush as always was spot on and Ebbers and James thank you for the commentary also all the people behind the scenes. Merry Christmas and Happy New Year.
Kush unleashed!!! And I'm with you about turkey dude. I roast a picahna for my Xmas dinner cos I'm on my own, so it's a meal hot, the cold for a couple of days after. And it's cheaper than a bloody turkey. What a great teacher Kush is. When Jamie mentions having issues he gets him doing it while he guides him. Nothing teaches like experience.
It’s a vey good move of Sorted that they made Kush part of the team. He’s not only a very knowledgeable and good cook. But a good teacher and he has a natural camera presence.
Ebbers's and Kush need to do a monthly series, Ebbers's Unleashed and Kush Unleashed where they show their chefie skills in whatever direction they want.
I can't help but mirror the other comments I see here. I could literally watch this for hours. Kush speaking so knowledgably, broken up with commentary and chill music in the background. Please, please, please consider doing more of these in the future! I love the Sorted craziness of Pass It On and the fun games but Kush just brings a whole new 'cheffy' vibe to the set. Thank you for the daily videos this month!
i just realised theres only two advent videos left! so congratulations on pulling this off, and thank you, its been awesome to get a video a day for a bit (even though its not over yet)
Firstly, thank you for the advent of videos! As a creator of a small channel, I know how much work goes into one video a week. The fact you've done nearly 24 in a row is phenomenal, regardless of the fact there's a team there, and it's been a joy to watch these! Secondly, Kush is so stupidly good at what he does. I'm sure he could walk into a job at any professional kitchen. But I'm very glad he's with Sorted and sharing his knowledge and skills with us! 💛
Kush walked out of a professional kitchen and into Sorted's kitchen! And I love it. He can be such a massive troll (burger challenge with flying ping-pong balls!) and also such a great teacher, like in this video. :D
I'd love to see more of Kush in general. He's got such a soft confidence, where he truly knows what he's doing, but doesn't feel like he's showing off.
What a show! That was excellent. As much as I love watching the "Normals" on their journey, I like to see trained chefs; like Kush, Ben & James cooking with the gloves off. I've done a few ballantines over the years, but have relied on the proteins bonding naturally. Meat glue makes a difference. The last one was rabbit meat, stuffed with sweet Italian sausage & pistachios, wrapped in lightly smoked bacon. Was very nice.
@@neilthehermit4655 It was really, really good. Like the turkey, rabbit can be dry. So the fat from the bacon & the sausage meat helps keep it juicy. I love the fennel & spicing of sweet Italian sausage & it compliments the mild gamey flavour of rabbit well. If you don't want to use a lot of plastic then most ballantine recipes can be easily turned into terrine ones. Though some see terrines as a little old fashioned now.
Kush teaching something that clearly is so important to him is so enjoyable - which is more remarkable when you find out I’m a vegetarian and don’t cook things I don’t eat
Amazing video, absolutely loved this. I cook a lot and watch a lot of terestrial and online cooking content and have for my entire life. There were so many little things in this video that I had never seen talked about before. From a long time fan, please do more videos like this! I love James and its always great to see him back but having Kush be more present on the channel has been a game changer for me. His level of expertise offers something really unique that no other mainstream channels I watch provide.
Liking the video, sharing it with friends, and making a request of a secondary channel that is just Kush teaching. Dude is next level, and easy to learn from seems like. Loved it and will be rewatching for sure.
One of my favourite ever Kush videos. Please - more, more, more !!! I learn so much from watching him (and Ebbers, too !) but they are a joy to watch and so so good at teaching. As lots of people have said - the way he brought Jamie over for a little private lesson was just perfect. Honestly - more of these, please. Don't care at all what type of food/occasion - just want to see more !
Kush. You can tell how much passion he has for food, I commented on the sides video the other day, the way he feeds the guys, even just the mushrooms, even though he is possibly the biggest prankster in the kitchen, I just want to be around him
Seeing either Ebbers or Kush go wild is always a treat. I always remeber one of the old grocery bag challenges where Ben showed three great recipes and it was brilliant. Such a great resource having two chefs explain their method mind set throughout the process!
There is something very charming about Kush. His talent, skills, humility, soft speech and generosity in sharing his knowledge. What a great team you have ❤
Kush - your videos are my absolute favorite. You are the most wonderful teacher, full of creativity and the ability to explain things without being condescending. I could binge your videos all day.
Last comment from me, today. I promise. We have turkey at Thanksgiving. These days, I’m in charge of the holiday, and the only change that’s been made in the menu, in 40 years was brining the turkey, about 20 years ago. In my family, if you show you can do something well, say brine and cook a turkey, it’s your job for life. I’m fine with that. I am firm in my traditional menu, and have fought for it, with an iron resolve, ever since I took over. But, for the first time ever, I am considering a change. Kush, this looks wonderful, my family would love it, and barring any problems during a practice session, this will be the main dish for Thanksgiving. Next year. Congratulations. You’ve worked a miracle. Merry Christmas to all of you.
This is fascinating even if I don't have turkey to cook different traditions here. Not sure I'd trust myself with meat glue though. Kush is great at explaining cooking methods.
Ok, I get that sorted loves hacks, simplicity, cooking for normals, and that’s fantastic. But I EQUALLY love watching Kush, over the top, going all out, while also explaining the simple bits that can save time and pack flavor. I will be browning butter then adding herbs instead of adding them to my stock from now on.
OMG! It is so amazing to watch and hear a chef at work... As a noob cook my ears and eyes start falling of when i see the talent and technique's. I would love to try it all....Thnx Kush! Rulez!!
Discovering sous vide cooking 15 years ago was a game changer for me and our usual dry Christmas turkey. My first version was an old bottling urn with a temperature controller connected and the results were fantastic. But Kush has definitely upped the game with his amazing prep so I will take it on board for next Christmas. Already ordered the meat glue. 🎄
Oh Kush! I break my turkey down too but I’m not as cheffy as you. I braise and pull the dark meat, brine and roast the breast, make delicious turkey stock just as you do, and also killer gravy. Bread stuffing on the side. You certainly elevated my game!
As someone who has followed you all for... I don't care to remember... Kush has definitely earned his spot on the show. I stand by the Idea of a chef+ vs chef+ vs chef +, as long as James, or another guest chef if he isn't available... Merry Christmas to the whole team!🥰
Kush!!! Wowowow. I would love to see him sharing the food he grew up eating at home, because it’s probably quite different from the other guys, or even a full Diwali/navratri menu
How is it that every chef you guys @ Sorted find/partner with are all epic! Somehow I think you have managed to save the best until now, Kush is like a combination of the best from Ebbers and James! Plus because I am less of a chef than even Jamie or Mike are... Kush somehow manages to explain things simple enough for someone as useless as myself to fully understand it!! Thanks all @Sorted Food!!
I’m a 69 year old Australian and for us older Aussies, turkey was never on the menu at all even at Christmas, and I’m with Kush in his attitude to turkey. It’s summer! We don’t want a hot kitchen or masses of hot food for Christmas! Our family is totally non-traditional so our lunch will be lovely jumbo-size tiger prawns, ham and three salads - German potato salad, rocket, pear and almond salad and a lovely tossed salad including fresh-from-our-garden salad leaves followed by pavlova (made from our own chook egg) with Chantilly cream and piles of fresh berries - again from our garden: raspberries, strawberries and giant American blackberries that balance the sweetness of the pav and richness of the cream. That’s it! Easy and DELICIOUS! I loved watching Kush prepare this wonderful turkey medley though!!! I so want to know the menus are that you are all having for yourChristmas lunch!
I'm Australian too and we've always had a turkey and a ham. Never had prawns at Christmas, nor salad. My mother used to insist on Christmas pudding for dessert but I've moved away from that. Now I make an unusual and special dessert - I've made rum babas, German cheesecake, Japanese cheesecake, Black Forest trifle and many more.
Kush is amazing, awesome, and i could watch him every day. I learned so much from watching this one video he's is an amazing teacher. Now, I'm going to look for the videos that were mentioned in the comments section. I've got my fingers crossed that I can find them. Thanks for a great viewing year. Happy Christmas and a very Happy New Year to everyone. 🎄 🎅 ❤️. P.S. I'm on my 3rd viewing taking notes as I go along.

Love how Jamie is so invested in this master class. Feel like he is eating with his eyes throughout the whole video 😂 such an amazing video Kush!!
Oh, I'm jealous. Where I live turkey is super cheap, but you're gonna pay a premium for a good bit of beef round :P
Kush can cook. Top notch and a very good tutor / presenter.
I'll second that on both counts. 👏
He left professional kitchens to come and play with us... And I think we're all winners! 🙌
@@SortedFood I think I remember that he *may* have mentioned working for Raymond Blanc... once or twice. 😂
That sounded like a beautiful meal.
I am seeing Kush more these days ans yay!!! He really is a good teacher and so funny! What a good idea!!
Poor Kush! We should let him make his favorite meal for his favorite holiday! Soup to nuts!
Kush is so adorable. I love how he brought Jamie in to learn more about browning butter. He seems to really enjoy teaching others about cooking.
I did not know that about refreezing meat ... once you change the state it can be refrozen! Thanks for all the super advice, Kush, Ben, and Jamie!
Jamie is the person every cook dreams of cooking for! The genuine reaction is everything!
Liking the video, sharing it with friends, and making a request of a secondary channel that is just Kush teaching. Dude is next level, and easy to learn from seems like. Loved it and will be rewatching for sure.
I love how knowledgeable Kush is. And he tells you all that constantly. But he just wants you to learn!
Love watching Kush work, definitely need a series called Kush Unbound or something of that nature!
Yes, we would absolutely want to see more of this!
Seeing Ben and Kush cook is a joy in itself. This was a beautiful display.
One of my favourite sorted videos. Amazing seeing the technique but accessibility Kush brings to cooking.
What a great team you have ❤
Yes please!!!! I hope this finishes with Christmas dessert in the next installment!!! ❤️❤️❤️
Kush knocked it out of the park again!!! Well done Kush!
This was incredible! Given a big dish Kush is a star at describing the processes!
This is fascinating even if I don't have turkey to cook different traditions here. Not sure I'd trust myself with meat glue though. Kush is great at explaining cooking methods.
Do you have this in a written recipe? Love seeing how Kush has stepped in front of the camera this year. Always love to see him in videos!
Yes please! Written directions please!
You could type the recipe out while you let the video play maybe? I've done it a few times for video recipes
That is awesome!
Oh Kush! I break my turkey down too but I’m not as cheffy as you. I braise and pull the dark meat, brine and roast the breast, make delicious turkey stock just as you do, and also killer gravy. Bread stuffing on the side. You certainly elevated my game!
Honestly love anything with Kush atm, insane how he works
Well done Kush!!! Love your skill.
As someone who has followed you all for... I don't care to remember... Kush has definitely earned his spot on the show. I stand by the Idea of a chef+ vs chef+ vs chef +, as long as James, or another guest chef if he isn't available... Merry Christmas to the whole team!🥰
Let Janice pick the teams 😉
Kush!!! Wowowow. I would love to see him sharing the food he grew up eating at home, because it’s probably quite different from the other guys, or even a full Diwali/navratri menu
Love this, Kush is a natural educator, full of knowledge and skill and has a humble style. More of him please!!!
JUst want to say it's great seeing more of Kush, he's a lovely dynamic in the team
Less than 2 mins in and I'm loving the look of puzzlement on Jamies face😂
Kush is an absolute genius. Wow this was impressive and I could've watched this for far longer than 31 minutes. Wow
