Ben hit the nail on the head with "sometimes it's nice to just to watch chefs chef-off". This is why cooking shows are popular. I'm a decent cook, but I enjoy simple cooking. However, watching a chef chef-off will usually give me ideas for meals, tips for making cooking easier, and Kush is great at giving us great hacks that restaurants use to making everything easier. Another great video!
It doesn't matter what they are doing, I just enjoy watching professionals do 'their thing'. From woodwork to computer programming, watching passionate, knowledgeable people never gets old.
As a guy who worked in fine dining years ago, it's astounding how easy Kush makes some of this look. His techniques are out of this world and his flavors and balancing are unmatched by anyone else on YT. I know most people who haven't ever worked in food don't really 'get' the plating thing, so I'm really glad you guys mentioned it in this episode. You eat with your eyes first. And to anyone who hasn't worked food or who may think you could do this easily at home, I want you to try to do a regular quenelle, just a regular one with something stiff like a sorbet or pate. You will fail your first 50, easily. The next 100 will be passible, by home standards. The next 1000 will mayyyybe be passible at a restaurant. At that point, switch to doing it with a soft mousse and one handed and you'll see how bonkers his skill level is. Sorted, if you ever find yourself in the US again, I will gladly host you with an authentic Southern Crawfish Boil and BBQ.

I found myself smiling, all through- the boys on the side, watching appreciatively, oooh-ing and aah-ing with every spoonful, Kush calmly carrying on slicing away like a fiend without even sparing his beloved knife a glance, practically gliding from one step to the next, keeping up a steady commentary- it's like a zoom masterclass on cooking while you entertain guests! What a fabulous, midweek treat, indeed!
It’s great to see how a really good chef handles things in the kitchen. Not that Ebbers isn’t a really good chef but he’s been out of the working kitchen game for a while. While working at Sorted is still cooking, it’s not the same as being a working chef for paying customers. And tbh the approach IS different from that of a cook. There’s a hell of a lot more thinking to it for a start, and a deep knowledge of how everything should taste.
I love Kush. He can be silly and playful or sincere and artistic and I love both. But the thing I think I enjoy most about him is how genuinely he seems to love when people enjoy his work. When you've done behind the scenes videos and he's making mountains of food for the whole team, or in this video where Mike and Jamie are just speechless enjoying his sea bass and salad, the smile on Kush's face said everything you need to know about him. I could easily watch a thousand videos just like this.
There's no denying the sheer talent of Kush, holy crap. If someone served that food to me I wouldn't have the words adequate enough to thank them. That's the kind of stuff you pay big money for
I love watching Ben and Kush together because its like watching a mathematician and an engineer. Ben has such an astounding foundation of knowledge and Kush is incredible at application. Both are great at both aspects but it definitely feels like each leans towards a certain field. Iove watching people who are passionate about their interests and Ben/Kush is always entertaining.

as part of my chef training beverage pairings was included, it's basically just "will the entire dish taste like the drink after i take a sip?" because if that's so you might as well just doused some bread in it and eaten that instead. I did however find the lil instruction on how to actually read wine labels quite useful, every time I try a wine I take note of what the important bits were like what grape,region etc it was then if I like it I write it down and the next time I go out to get more I take that note and compare it with the new wine. some grapes I have entirely written off, only ever drink a wine with them if it's offered at a dinner party and only the ones of that grape I havent encountered yet. (might surprise me but im not willing to spend money on actually seeing if it will surprise me this time)
@@goranpersson7726 oh there definitely is a difference with the proper pairing, but a lot of the times, customers want to drink a wine they like, even if the pairing sucks (stuff I've seen.. a sweet rosé with a rare steak, or a full bodied red with sushis) In the end, I prefer that the customer enjoy their meal with a wine they'll appreciate vs something they would never go for And yeah, I definitely didn't try all the wines, but I often go by grape variety or region (usually both) a among other things if I'm being asked questions about it

I'm in a cold climate so mine aren't quiet ready. I grow them for the leaf cover to keep in moisture and the flowers, they rarely get full size in my garden.
Honestly I love watching Kush in an almost instructor role. He's got the confidence throughout everything he says and does while cooking that you are drawn in much more than you may normally be add to that the way he is capable of breaking it all down to a very approachable and easy to take in verbal instruction it's top notch. If he ever decided to go the route of being an instructor I feel like he'd do a hell of a job at it.

Watching *any* professional casually do stuff that took years to learn is always fascinating. It's the little none-spoken things; how they stand, *when* the stand and when they can sit down, how they batch jobs up, how they hold their work...
Wow! Ben is right, just watching Kush chef it up unleashed at his pace rather than in a challenge brings out so many little details for us. I could easily go for one of these monthly as seasonal ingredients come and go. Mostly just an excuse to get Kush to create these amazing dishes for us then watch the crew go wild over the taste.
Can yall PLEASE do an episode of dairy free? Some ideas would be good substitutes, baking, cheese or ice cream alternatives, blind taste tests comparing non-dairy/vegan against the dairy version, that kind of thing! I am newly lactose intolerant and there is a whole community of us out there who would love any help we can get!

The big smile on Kush's face as his friends eat his delicious food is so endearing, it's exactly why I love cooking. By the time i'm done, I'm usually "full" from the smell and the effort but the joy of bringing others fullness and joy is indescribable.

I never tire of watching him unleashed. I've been watching Sorted for a long time at this point, but I think you've all really hit a golden era in the last year.
I love Kush. Thought I wouldn't get over James leaving but wow was I wrong. He's the perfect balance between incredibly skilled and incredibly goofy. Also love,love,love their relationship with Ben. It's a mix of banter/competition you have with close friends that you share a common skill with and I just love how Ben is obviously in awe/respects the hell of Kush's cooking when he's observing him.
What I love about this is how accessible all of the dishes are. I may not be able to make the food look as beautiful as Kush has, but I have all of the equipment necessary to do all of this as well as the cooking skill. Nothing about this is hugely difficult, this is a fantastic series to learn from.

I know I'm just one person in a sea of many here. But I absolutely agree with Ben here. It is, in fact, fun to watch chef's "chef" off. I would love to see more videos in this style where we watch Ben, Kush, or even James, just chef off and talk us through what they are doing and just generally chatting it up with the boys.
It's always a pleasure watching someone who really, REALLY knows what they are doing. And can EXPLAIN what they are doing and why they are doing it. So both entertaining and educational.
These Kush unleashed videos have been some of the most informative and useful cooking videos I have ever watched. The amount of these tips I have been able to work into even my everyday cooking is astounding. Look forward to more of these.

Yes, I, for one, love to see Kush cook. He is amazing! I loved all his dishes, but the dessert one I can do, the first two, well...I don't have Kush's or Ben's experience.

I could watch Kush cook all day. I can't get over what a fantastic teacher he is. He doesn't explain things like a child, yet he makes it so easy to understand. If I wanted to become a chef, I would hope I could work under someone like him.

I know I'm just one person in a sea of many here. But I absolutely agree with Ben here. It is, in fact, fun to watch chef's "chef" off. I would love to see more videos in this style where we watch Ben, Kush, or even James, just chef off and talk us through what they are doing and just generally chatting it up with the boys.
