It's a lot of effort for a single meal and therefore I am startled (non professional home cooker here), but this looks like a meal, I would prepare for loved guests and myself.

To be honest if you have everything at home its easy
its actually really easy. you cook rice in a rice cooker. you prepare your filling (take whatever you want). wrap everything in the nori sheet. nothing hard here.

It's easy...it just that Joshua complicated it. He's trying to make sushi rice that's on par with mid to high tier sushi place. If you want simple down to earth basic sushi rice....you just need rice cooker (honestly I know people who cook rice perfectly in a normal pot so if you can do that you don't even need rice cooker), short-grain sushi rice, sugar, salt, and rice vinegar. If you don't count how long it takes rice to cook then you can do it in 10 min or less.

I think he’s way over pricing these things. Sushi rice is about 12 dollars for many servings, and salmon is about 10 dollars a pound where I’m from. It’s kinda of a hefty down payment but most ingredient will last for a long time
Kimbap would be cheaper and easier, though it’s a somewhat different flavor with the sesame oil
Just made this. It was like $30 and serves 3 people easily. $10/person isn't terrible for sushi. It also wasn't hard. By the time the rice is done, you can finish the prep on everything else. Not incredibly time consuming compared to some other dishes I've made and not hard on a level of skill. But you could also take the time and money you used to make this and make a big meal for 3 days worth of dinners and $30 is an entire week of meal budget. So it depends on if you think it's worth it.

Seems like a lot of people in the comments are disheartened by the complexity of this recipe so I just want to put it out there that it really doesn't need to be this complicated to make sushi!
You don't need a rice cooker, you can just use a normal pan (loads of videos/articles on cooking the perfect rice this way), and don't worry about the wooden bowl. Yes, it's not the authentic way, but at the end of the day you just want some tasty sushi, right? The sushi zu can be found bottled in the international section of loads of supermarkets often labelled as "sushi vinegar", but if not you can simply make it by mixing just vinegar (doesn't even have to be rice vinegar, apple cider vinegar works well) and sugar. For the fish, I usually just use canned tuna, smoked salmon, or those processed crab sticks.
Obviously you won't get restaurant quality sushi, but as someone who's made sushi at home a lot, I promise you it's really easy and rewarding to do at home and getting bogged down in expensive ingredients and tricky techniques totally isn't necessary to making delicious sushi at home!
I agree. You can even just roll up cucumbers or avocados or any veggie really and a mix of Mayo and Siracha as a sauce. I've also done sushi with medium rare steak - unusual and more suited for a spring roll but still interesting and tasty - heck, pour some A1 over while you roll it up and make it gringo sushi...
@reimu It's not exactly a flaw. It's something he doesn't even see. I've been cooking all my life - I started with spaghetti and marinara sauce around age 10 and my mother encouraged my interest. Once I moved into my own place in my 20s I was able to bring something to the table that most people would call edible or decent. If cooking interests you, learn to improvise. Cooking starts where recipes end - meaning don't cook by a recipe. Take a recipe and try to make it your own. Yes, you will have a lot of more or less miserable failures, but it will teach you what you're asking for from Josh. It's something he doesn't think about anymore and frankly I don't either after cooking daily for over 40 years (not professionally, I just don't eat out and cook every meal myself, mostly from scratch). There comes the point when you start looking at recipes as a "method of cooking" - i.e. a pilaf is always the same principle, same goes for a risotto and yes, that includes a paella which is also kind of a risotto. So once you figured the "method" it's really easy to use that method with different ingredients. Stop looking at recipes or cooking videos as how-to's. Look at them as a form of inspiration and to learn a technique. The rest is simply experimenting and you'll get better (meaning you'll have less and less failures) over time.
Edit: if you want to watch some videos which focus more on cooking as a method, head over to "Glen and Friends cooking" - he often explains methods of cooking and is easier to digest in a home kitchen setting - his b-roll is, well, non-existant. Josh is simply the king of food b-roll (so watch both channels)

@@ibic2441 you know, Guy Fieri only landed his show on Food Network because he's outrageous. His (now closed) restaurant in California also had an entire menu full of ridiculous sushi called gringo sushi - some even with rice paper as wrapper. While I don't like the guy at all because he's not a good chef, nor a likeable personality, I have to give him credit for putting things into sushi that should not happen - but they do work. While all the sushi chefs from Japan will be turning in their graves, I'd say why not wieners?

Tried it today! I commited a sacrilege and used immitation crab sticks and fried on the same butter some almond flakes for extra cwispiness. It was DELICIOUS!

A friend who lived in Tokyo said these had rolls were the stuff of summer roof top Friday dinners. They taught us how to make the equivelent of a sushi hand roll fix'ens bar for fair weather gatherings. Love it!

I made this or my family today (minus the crab an caviar cause I'm not rich) and they loved it. they where shocked by how good it was and kept complementing me for the rest of the day. you should make it, it was totally worth it.

Actually, Japanese caviar is one of the best & cheapest fish eggs on the market. You don't need much, and the average 2oz starts at $12 for Roe. Now, Royal Ossetra Caviar is $100 an ounce. Which is never used in every day sushi. Thought this would help. Asian markets have fresher fish and better prices than most American economy markets to boot. So no, Josh isn't rich, he knows where to get the correct ingredients for the dish at the best prices. It is how professional cooks roll.
@bob bob If you seriously can't see why someone would call him rich for such specific and rare meat and caviar, then you can't imagine what it feels like having to listen to your mother tell you why you can't afford school lunch and need to wait to get home in order to eat. I know "rich" can be subjective, but isn't it obvious when 1 pound king crab legs cost 40 fuckin' bucks, which is way more than I can spend in a week for groceries?

It has become authentic in the last decades tho. Have no idea why Japanese like mayo so much, maybe they were influence by the closeness of Russia.
Mayo isn't even the issue. I've never seen anything even resembling these in Japan. Corn/mayo is pretty common, but mayo/tuna is usually canned tuna and only really used in onigiri. Never seen spicy sushi of any sort here. Crab based rolls aren't very common, maybe crab + japanese omelette in a maki... But yeah basically this whole thing is inauthentic.

Bruh the ingredients alone i cant find in our grocery
A lot of sushi ingredients can either be found in the international / foreign section of the store, or you could get them at an specialty asian food store (I think we go to one called Hmart? Not sure, it used to be right next door to us)
