    Hi Josh, I am a Chinese (in more specific I come from Hong Kong), I can say that your recipes are 85% similar to the traditional recipes. I'd like to point out some things from my understanding.
    1) you could have a wok lid instead of just using the aluminum foil to cover the wok, if you need one I think uncle roger can help @mrnigelng;
    2) if you have enough time, please soak the dried mushroom with room temperature water for overnight, it can keep more of the favour inside the mushroom;
    3) completely cool down the turnip cake before you fry it, it is completely correct, but you should leave it in fridge for overnight instead of just leave in room temperate for 1-2 hours, It looks so soft while you are frying it;
    4) the lotus leaves don't look exactly the same as the one we used in Hong Kong (or Canton), but I think it is quite difficult to find it in overseas.
    Anyway i think Uncle Roger can still give you the Uncle title after watching this video :)

    • @cosmicray8172
      @cosmicray8172 2 года назад +176

      im from the US so thanks for your commentary!
      the leaves he is using in the video are actually corn husks, because lotus leaf is expensive/hard to find in the states, so josh is trying to get the most authentic texture and flavor with what he can use. corn husks are often used for steaming tamales and are much easier to find in the states.

      Also the turnip cake should use a specific type of chinese cured sausage called lap cheong. It should be available in most chinese super markets (Chinese Cooking Demystified did a whole video on it). It's hard to explain but it has a very unique texture and taste that isn't similar to any other common cured meats so it's definitely worth looking for.

  • @ShikiKaze

    Big tip on the Char Sui. Use brown sugar( a lil less of whatever white sugar is called for recipe.) the molasse in the brown sugar will hold the meat's moisture better when cooked. Try it out, it gives a slight hint of caramel sweetness.

    A large produce stand I shop at regularly has an entire aisle of mushrooms. All different types. They always bag up the mushrooms that haven't sold or look a bit beat up. (still good tasting) and sell them for the same price as the button type.I make mushroom soup often with these or dehydrate them for future use. Part of cooking is shopping for ingredients carefully, especially if you're on a budget.

    I love these recipes! But as a cantonese who eats cheung fun every other day, I’ve never had it with the mushroom/cabbage filling. It’s normally filled with pork/beef/egg and served with Cheung fun soy sauce, which is absolutely essential and is most important part of the dish.
    As for the turnip cake(my favorite food!), we would switch some of the mushroom for dried scallops and dried shrimp for better umami, and add a bit of ginger for the daikon. I would also add less water for a bit of a firmer texture. Lastly, you should let the cake cool completely then put it into the fridge overnight to firm up before cutting and frying.
    Great job overall!

    Another person from Hong Kong here. I have dim sums every weekend with my parents when I was a kid. Here are a few humble suggestions. (1) The chicken in the stick rice look too pale. Try add some dark soy sauce for color. Also add some cubed mushroom to make it more fun. (2) most popular cheung fun fillings are beef and pasley, char siu, or shrimps. Another popular option is pan fried cheung fun (no fillings) with dipping sauce. (3) we don't consider pork dumplings as dim sum (just a traditional thing), but shrimp dumplings with translucent glutinous wrap. Also try adding chive in pork or shrimp dumplings, it will change your life.

    Going to an Asian market for all your vegetables is a great money saving idea, at least in my area. Garlic, every kind of onion you could ever need, root and leafy vegetables, they're all almost half the price of big box grocery stores here and you can support a small business that actually needs your money to boot.

    Joshua Weissman: You don't ever want to just "cover with aluminum foil" especially if you're talking quality dim sum execution. Lay down a tea towel first. The reason bamboo steamer lids are preferred is because it doesn't collect condensation that will drop on to the food (as it would with aluminum foil). This is basic Chinese Cooking 101.

    Hate to nitpick, but your cheung fun is missing a couple things for the batter. Couple tbsp of tapioca flour or potato starch will give it a chew. And a little drizzle of sesame seed oil helps retain moisture. I also throw in a tsp of sugar. This will also allow you to go thinner.
    But your turnip cake, YAASSSSS.

    Maybe try one first to get the feeling.
    In some places they even use starchy water to get more crust.

    You should travel to Boston MA or Quincy MA for some amazing Dim Sum. I recommend Hei La Moon, bring someone who speaks Mandarin though.

      Oh yeahh the vibes there are super awesome, incredible that they housed a dim sum palace inside an opera house
      Nonetheless for better and far cheaper dimsum, I would suggest South East Asia.

    Omg turnip cakes the best dim sum dish!! I’ve always thought it was hard to make but your recipe seems easy enough.

    other types of cheung fun are made up of just a giant pile of the noodles mixed with eggs, greens and whatever's in the chef's pantry and drowned with special soy sauce. It's traditional breakfast and tastes amazing. They're fast food too; experienced makers can put out a few dozen servings per minute.

    For any ingredient that can spoil you should put the full price there instead of just that you use. It's unrealistic to think people will use all of it or know what to do with the leftovers.

    See I love cooking. But I’m broke and a minor so getting a bunch of ingredients is hard 3: but I do love to cook I’m not like some people who see it as a chore. (Ngl sometimes I like cooking more then the eating) this channel is awesome!

    You can replace the food coloring by adding fermented bean curd if you still want the red but dont want to use food coloring, it wont be as vibrant tho

    I honestly think Josh only makes these videos in order to be able to say "balls" on YT. And I'm down for that level of childishness. 🤣Good job. Food looks delicious.
