Best Homemade Dumpling - Better Than Takeout (Dim Sum)

- 200g shrimp (weight peeled)
0.5 tsp salt
1 tsp sugar
0.3 tsp pepper
1 tbsp white wine
0.5 tsp chicken powder (if not chicken stock)
1 tbsp potato starch
1 tbsp cooking oil
0.5 tsp sesame oil
50g wheat starch
25g potato starch
70g water
1. Wheat starch can be purchased from Chinese food stores or the Internet.
2. Pour hot boiling water directly into the starch and mix.
3. For dumpling stuffing, you can add bamboo shoots, green onions, or ginger if you like.

Hello, I was looking for a Har Gow recipe which included making the dough. Thank you which in another week, I will be celebrating Chinese New Year. Since, dim sum is slim where I live, I plan to make some traditional dim sum. Bless you 🙏 and thank you for sharing.
Hi! I have gone through countless videos on how to prepare these and have always had issues with dough ingridient ratios. This one was by far the best. I added some garlic to the filling which is a personal preference and came up with the best shrimp dumplings I have ever made! Thank you and keep up with the great content!

Wow 🤤garlic is an ideal now. May I ask do you have problem with the dough gets rough after leaving out. Like ya know some place hagaw can be rough chewy if you don’t eat it right the way. 😊😊

Shieh shieh...my first time making these. I am an American born Chinese. My dad made fun gow but I only watched him do the pei as a kid so trying to perfect. First time making har gow. 👍 Thank you for the excellent instruction. I did not have potato starch so used corn starch and my dad never used anything but wheat starch so I have been trying to perfect a ratio that I'm used to so used slightly more what starch and slightly less corn starch but followed your technique. I put dumplings in a plastic bag while I made them all. I like the fact that this is a very manageable amount of dough and perfect for two people. Took me longer to make then than eat them! 😆

You don't need to add white wine, but it tastes better if you add it.

As a Hongkonger, I have to say your Har Gow was perfectly made. This is my favorite dim sum when I go to Yum Cha. However, authentic Har Gow will not go with vinegar and soy sauce. Some people would like to dip a bit chili sauce. I just eat it without sauce in order to taste the Umami of prawn.

You have to buy these ingredients in an Asian market. There is such a thing as potato starch and you need to look for wheat starch not wheat flour that is used in bread recipes. Wheat starch is what she uses not wheat flour for bread making.

I have to say but this ha gao is perfectly made!!! I can even taste the umami in it QAQQQQQ
My personal preference of eating ha gao would be just simply having ha gao with chilli oil
That’s the way that you can taste the full flavour of shrimp and the umami with some tinkle of spiciness which bring the ha gao to the next level!!
Cuz im afraid the soy sauce and vinegar would cover most of the taste of the shrimp 😢 (personal recommendations only as different ppl got different preference)
But eating regular dumpling (meat filling or vegie filling) with soy sauce and vinegar with chilli oil is one of the best way to eat it!
They do that there because Japanese eat like that and they were ruled by the Japanese for some time. Funny thing is many of the young who don’t know the history think it’s their culture…actually they got that from the Japanese as they used to be a Japanese colony. Like potato salad, it’s Japanese potato salad. Not a Korean thing.
@Markson.c12 The ideal sauce is 3 parts soy sauce, one to two parts Chinese black vinegar and a few drops of sesame oil. Just add 3-5 drops of this sauce per dumpling and the shrimp flavor will come even more alive.

Late reply: gluten free all purpose flour. If it doesn't work, I have seen someone used rice paper as substitute dumpling wrap. It maybe sticky but as long as you put a bit of oil on the baking sheet, it will not be as sticky. Hope this helps you. 😊
