  • Can you believe it's already time to start preparing for the school year? The summer has flown by faster than you can say "fire up the grill." I like to take advantage of the time leading up to Labor Day by planning out my go-to meals for the fall, and today's recipe is one of my absolute favorites. It's a chicken and broccoli stir-fry with an Asian-inspired sauce. Once your ingredients are prepped, this meal is super quick to make and filled with outrageous flavor! This September, it's time to put down the takeout menus and make a dinner your family will love to come home to.
    Sarah's Tip of the Day:
GGS: Ginger, garlic, and scallions will instantly infuse your meal with Asian flavors. The combination can be spicy for some, so adjust the added amount to your liking.

    ---------------------------------------------------------------
    PREP: 30 MINS
    TOTAL TIME: 30 MINS
    SERVINGS: 4
    INGREDIENTS
    2 tablespoons soy sauce
    2 tablespoons rice vinegar
    2 tablespoons oyster sauce
    1 tablespoon cornstarch
    1 teaspoon toasted sesame oil
    2 tablespoons vegetable oil
1 pound boneless, skinless chicken thighs, cut into 1/2-inch strips
3 tablespoons minced peeled fresh ginger
    2 cloves garlic, minced
    2 scallions, thinly sliced
1 bunch broccoli, cut into small florets, stalks peeled and thinly sliced
    Cooked white rice, for serving
    DIRECTIONS
    STEP 1
Whisk together soy sauce, vinegar, oyster sauce, cornstarch, and sesame oil.
    STEP 2
In a wok or large skillet, heat vegetable oil over high. Add chicken and cook until browned, 10 minutes. Add ginger, garlic, scallions, and broccoli and cook, stirring frequently, until broccoli is bright green, 3 minutes. Add 1/4 cup water, scraping up browned bits with a wooden spoon. Stir in soy sauce mixture and cook, stirring, until thickened, 1 minute. Serve warm with rice.

Hi, Sara. Thank you for the tips on keeping the kids happy. My youngest has just started eating broccoli, so you just don't know how much this little recipe is going to help me out! We know if the kids aint happy then it's hard for mom to get rid of stress. :) Thanks, girl. xoxo

I really liked Everyday Food when it was on TV and think it should be back on TV!! Sarah Carey, Lucinda Scala Quinn, et al. were great and it was very educational and inspirational in that it made you want to go to the kitchen and cook! That's the mark of a good cooking show. Food TV has degenerated into a kind of obscene food/game channel, food as contests and it's just absurd. It's increasingly hard to find the kind of terrific cooking/teaching shows like those that used to be on TV. There are still a few on PBS but even those are getting scarce. The online cooking bloggers are a mixed bag for quality, but Jenn Segal of "Once Upon a Chef" is excellent, and I'm sure there are others I'm not aware of. Sarah Carey, I think you're terrific and wish you had your own TV show! Thanks for all the great "inspiration" to head for the kitchen to cook.

Hi Sarah, I just finished making this recipe, and it was so delicious and simple to make! I did however reduce the amount of ginger and used 1 tablespoon of liquid aminos instead of 2 tablespoons of soy sauce. Can't wait to try more of your recipes :)

Hi Sarah, my granddaughter (5) and I drooled over the video this afternoon and went to the store to buy the ingredients. I made the recipe times another half because we have 4 adults and 2 children eating and it was awesome, nothing leftover for lunch tomorrow. I'm not a speedy cooker, so it did take me a while to do all the chopping, but this goes on our menu rotation without hesitation. THANK YOU!

Those ,, You Tube Chefs " are soooo selfconfident , they use too much salt ( often ) ,some odd ingriedences , totaly UNNECECERY , they change OLD Classic into some strange , OWN dishes , BUT they keep old NAMES ! OK , everybody can do what He ,She wants but ,,Cesar Salad should be a Cesar Sallad , ,,Beef Wellington "the same , not a ,, PORK Tenderloin Wellington" spiced with ,,something " better , low Calories ! I hope you understand my point of vue? Anyway Tania ,Cheers !!!

I am not claiming that this is REAL Chinese food. This is not what i am trying to offer. I am trying to give people ideas for good tasting food, that is easy and fast, using supermarket ingredients. Sometimes i use "flavors of" Chinese, or Indian, or Thai...but would never claim to authenticity.

So you dont velvet the chicken first? In other recipes, they marinate the chicken first with some combination of egg, soy sauce etc etc, and then they briefly cook chicken, set aside. Then they cook other ingredients before adding the chicken back in.
