Sarah, do you ever 'cheat' and microwave your potatoes with some salt rather than parboiling them first? I do that all the time for roasted, baked or pan fried potatoes and find no difference, except for the saved time and hassle.
Perhaps tempeh! You know tempeh, that sibling of tofu, made from fermented soybeans. Has interesting texture. Cut up in cubes, and add to this instead of chicken. Some more seasoning might be needed, because their cooked chicken was undoubtably seasoned with at least salt and black pepper.
