  • In Autumn time in Tasman, South Island of New Zealand the mushrooms are popping up in the fields and forest. In my little forest, a new treat has popped up for the very first time. Birch Boletes. I want to try something new with these tasty morsels and that is smoke them with native manuka sawdust and use them to add flavor to wild rabbit pie baked in the camp oven over the outside cooking fire at home.

    I love that you gave Bruno the head and feet; I do that as well. The chickens always go crazy for the guts and the kittens will fight you for the liver, heart, and kidneys.

    You know they got dogs out there thatll bring your small game back and find it in the bush.
    For a guy who hunts so often and has dogs crazy you dont have a retriever...

      None of my dogs are retrievers. They are pig dogs. Having said that my dog Bee will find a wounded animal

      @@ClayTallStories I wonder could you train up the odd pig dog who shows potential to work at other tasks like retrieving, defense or herding. Like how your dog pace is a pig dog but also part house dog and part leprechaun.

    Beautiful looking healthy rabbit mate ..over here in West Australia..when I shot Roos on farms the rabbits were like that ..I used to simmer the pieces for a few hours then fry olive oil coated with paprika..bloody beautiful..or we used to roll them in bread crumbs...Kentucky fried rabbit ...great video..

    I dead set think pies are the most amazing meals on earth. So filling. The blokes in the mines down the south of England lived on them, The crust on a Cornish Pastie was used as a tool to hold the pasty with(because of the coal etc on their Hands), the dogs used to get the crust

    Clay u are a determined bloody rabbit tracker. As an ex rabbiter, I was surprised that bunny went anywhere, making u work hard for your supper mate. They are easiest animal to skin for sure.

    So cool to see you harvesting mushrooms. I'd love to harvest more wild mushrooms but I lack the knowledge. I'll keep an eye out for birch boletes now though!

    225g (7 1/2oz) gluten-free white flour blend
    pinch of sea salt
    1 tsp xanthan gum
    110g cold unsalted butter, cut into small chunks
    1 egg, beaten with 1 tsp of water
    Try that for your pastry, substitute the butter for any fat or combination of shortening.
    Pity you dont eat spuds, theres a great potato pastry recipe that makes lovely rabbit pastys

      Try adding some wild pork to your recipe.
      Go mad and southern fry those younger rabbits. Marinate in butter milk for 24 hours. Dip in seasoned flour, back into butter milk and back into flour. Your Dutch oven is perfect for such, don't forget the lard!

    Mate first time I've heard you say something like it's not good to be on keto all the time, which is very true. Whole grains as a regular part of your diet is a great addition.

      @@ClayTallStories cancer is a real bastard but its not the only disease you can get. Keto has been shown to cause heart degeneration over long periods compared to the Mediterranean diet, which is basically keto with the addition of whole grains.

    that is great I am getting back into the bunnies and the stew I made last week I overdid the Rabbit nice but the meat turned to strings I think I got a few tips there, thanks mate. I use a 12guage interestingly I find far less meat damage than the 22 and #4 lead goes right thru apart from a few under the skin on the far side so relatively shot free though some bone splinters.       I have shot rabbits using the 410 with shot and found the same. The problem is the noise. BOOM! Goodluck with creating your next rabbit stew.

      Anywhere on the back will do it. Make sure it is freshly killed and it will fall off.

You said your coming off keto for a few weeks made me think a bit, do you think keto is good for summertime and then having a break during the colder part of the year ?       I think Keto is good when fruit are not in season in your own province. I live by the seasons. Hunt when it's cool and fish when it's hot...forages at different times.

    Based on the jump the rabbit did I expected it to be a spine shot. It happens with deer sometimes, they jump, drop down, you think they are dead, but after a while they get up and run...

      Thanks for letting me know. I have taken all the ones in the middle out. Only just to did RUclips on their wisdom make it possible for us RUclips rs to remove midsole adds using just our androids phones through the studio app. In the past it all had to be done on a desktop. Adds removed now. I hate them mid stream as well as it stuffs up the flow of my video.

    So u ise gluten free, flour , did u make the cheese? As this can have gluten added during the making, but typically 100 dairy cheese dosent naturally have gluten, ..
    My Dads partner is a Celiac so has battled with tummy issues for a long time b4 diagnosis shes in her 80s now ❤...
    Clay i need some of that pie the leek & rabbit & bacon & those mushrooms, i sure have led a sheltered shop bought food existence 😅🙏👍🫶
