There's a way to do a kind of wall-flip into a haystack; you just need the haystack to be close enough to the wall (or even a tree). You run onto it, then press the back eject, and you'll see Bayek do a backflip off the wall. If you do the entire process in one continuous motion, it's even cooler. 😎
Similar to the jump in AC3, if you hold sprint and don't move after doing a running assassination with the hidden blade, Connor will hold his position.
I miss the AC games where if you played enough and learnt about the hidden mechanics you could make parkour look even better. This is missing from new games, at least from Odyssey and Valhalla. Even Origins had some kind of side eject thingy, but I'm not sure.
Ac3’s parkour is worse than the ezio trilogy parkour. thats what it seems to me cus half the time connor doesnt do what i want him to do n it pisses me off. they just had to take away the free run button
Origins did have a side or back eject, and I managed to figure out how to use it. It will ONLY work (consistently) if you run up a wall and have nothing to grab, otherwise Bayek will ignore your command and just go right to the handhold. Unfortunately this makes it completely unusable due to the design of the climbing in origins

There is another rare parkour move in AC Unity. I did it yesterday which I never saw before and I was so happy. It is simple to execute. What you do is, go to a house whose upper window is very close to a tree on the street. It's branch should be facing towards the window. Then go in the house and run towards the tree and press the key to decend and Arno will at first climb on the branch and when descending, he will do a barrel roll in air or just spin in air while descending and grab lower part of the tree.
If you are asking how to do this tricks " For connor super man u need to be high ground drop yourself to the ground then when on the ground hold run button (R2 for example) And stop the walking button ( joystick for example) For unity ledge grab u need to be in a waaay from a wall and when you 0.00001 seconds from hitting the wall press the drop down button ( circle o for example) And you can do ledge grab not only in AC unity, you can in AC black flag, AC3 , AC syndicat, I dk if there is more I know i didn't cover it all but that all i know.

Assassin's Creed 3 and unity are my fav cause their stories are such a unique but familiar departure and they actually innovate in gameplay and animations
The AC1 vault over is a very cool move. Especially if you pair it with certain parkour objects, you can get pretty flashy parkour (for eg, I pair it with railings and stuff and it feels so cool to do that)
Despite AC 3 not being my favorite AC, its definitely the best looking one, theres something about they way connor is animated and his outfits physics that look so good.
