Recipe
2 cups Whole milk
1 Egg
1 teaspoon Salt
1 Tablespoon Sugar
1 cup (packed) Plain Flour
2 Tablespoons Butter
Method
In a blender, put all of the ingredients, except the butter.
Blend until thoroughly mixed, then heat
your crepe pan and melt the butter.
Add the melted butter to your mixer and blend until mixed in.
Take a paper towel and wipe all of the excess butter from your pan. The more butter you have remaining in the pan the more change the batter will stick to your pan.
Get your crepe pan really hot - wait until you see it smoking.
Pour your batter into the pan and roll it around. Pour the excess batter back into the blender and place the pan back on the stove. Crepes MUST be super thin.
Cook until the bubbles disappear (approx 30sec-1min). Release edge with spatula, peel the crepe up
with your fingers and gently flip it over.
Cook for a further minute on the other side. Repeat this process until all of the batter is gone.
Makes 10 crepes.

In South Africa, we call these crepes "Pancakes" and top each layer, as we take them out the pan with cinnamon sugar and serve with a slice of lemon for those who like a slightly tartness to all that sugar....I made them yesterday because it was cold here and we consider it 'comfort food'.
