This week celebrates my 27th birthday, and in celebration, I made fully loaded and FullyRaw Carrot Cake! This 3-tiered delectably sweet treat is perfect for any special occasion, and it's so special that I want to share it with you! Thank you all for being a part of my life! I am forever blessed and grateful for our community, for health, and for these lives that we have been given! I hope that you enjoy this recipe and that you share it with those you love as well! Sending my hugs!
Raw food vegan carrot cake! Ingredients:
~4-6 cups of juiced carrot pulp (drink the juice!)
~3-4 dried raw mulberries
~1 cup of raw raisins
~Approx. 2 cups of pitted dates
~Ginger spice or a pinky of fresh ginger
~Cinnamon
~Slice of vanilla bean
Vanilla Icing Frosting!
~4-6 cups of soaked raw cashews
~4-6 cups of raw young coconut water
~1.5 cups of pitted dates
~1 cup of raw fresh, squeezed lemon juice
~Sprinkle of cinnamon
~Pinch of vanilla bean
~1 teaspoon of rose water (2 if desired)

My husband always jokes that she probably eats a hue steak after each video it’s funny but I don’t believe she does and neither does he. With all these recipes and resources she has I believe she’s geniune.

JulieAnkha N. I made her raspberry (I think it was raspberry) cheesecake and it cost around 40$. Very expensive for a cake that wasn’t that big but it was good and interesting. Just not affordable...at all.
I made this about a week ago.. squeezed the carrots myself for the pulp (and yes saved the juice!) with a cheese cloth after blending in my vitamixer.. don't have a juicer just yet. It was sooo amazing! I love this recipe! I'm making the cherry cheesecake for sweetest day tomorrow! Kristina you are such a wonderful positive inspiration for me.. going fully raw is changing my entire life for the better! Your videos absolutely rock!
I made this recipe a couple days ago with the substitutions below, and it is AMAZING. I had a not-vegetarian guest over and she loved it too! Thanks, Kristina.
*Instead of carrot pulp left from juicing, I simply grated up the carrots
*Instead of dry mulberries, I used a combination of about 1 cup ground walnuts and 2 cups of raw quick-cook oatmeal. This also helped soak up some of the extra moisture from the fact that I was using non-juiced carrots.
*Instead of coconut water, I used a can of coconut milk (including the cream)
Caloric and VERY yummy!

Did you know that if one does not want to use nuts in them recipies, they can use SPROUTED GREEN BUCKWHEAT? it is delicious (tastes just like cookies when mixed with dates)...and best part of it - it is very low fat! our fruit gang used it here in Israel for our freind's birthday's pumpkin pie (YOUR RECIPE!) YAY! Thanks for all the inspiration.

Thank you, Kristina! I have my golden anniversary of life this spring and now I know this is the cake for my special day, too. I have gone from having days with fewer than three servings of fruits/veggies daily to about ten fresh servings daily. I have healthier nails, have lost half of the ten pounds I gained while entering a natural menopause without feeling deprived, and feel happier and more self-loved eating real food. The contents of my kitchen shelves, refrigerator, and freezer are evolving. Thanks again!

I watched some shitty review earlier by 30bananasaday guy where he slated kristina for her expense of organic raw foods.. but also for her personality.. I have not eaten a clean raw diet before. . And was just researching, as I am a meat eater but currently trying to lose a stone and eating lots of salad and looking for options for healthier meals.. kristina for me .. is positive, friendly , upbeat and a warm human being that is so hard to come across, so much so that I have only watched her vids today and already following on fb as she is inspiring. . Keep up kristina with the positivity.. and I may not go completly raw vegan but u are inspiring me to try new foods xx

you really made this? so I was wondering if the dates give it enough sweetness? because there wasn't any sweetners added at all
Yeah, it was really yummy! The icing gives it a sweet tangy taste. If you are going to make though make sure you have enough room in your freezer and make it for the exact day you plan on eating it because it can become a bit soggy overtime but not too bad. Good luck!

I am in the process of making this and the cake is delicious. Next time I American adding chunks of pineapple and walnuts. I don't know if I will make the icing with my version because of the walnuts. I am making a different version of the icing without so many cashews, but I give this 2 thumbs up.
yuuummm!! my mom's carrot cake recipe also has pineapple and walnuts and it tasted amazing! I miss it since going vegan. How did yours turn out? I'd love to try it if it was good!!
It makes it so much better, but the pineapples makes it a bit runny so you have to play with the amount to add, but the nuts helps with it.

Yes Sara. Turned out delicious. The people I shared it with were not raw foodist nor vegan and they really loved it. Took me two hours and a half to prepare it but was worth it. Really delicious :)

is rose water raw? i thought that one had to boil the roses and collect the steam. can someone explain this to me?
Jai Toodles you probably know this aftervall this time, but if you are still wondering, rose water is made in 2 steps: first the rose petals and parts are boiled in water, which breaks them down and rose oils collect on the surface of the now rosy water after it cools. Second, the resulting liquids - both the rosy water and the oil - are distilled. In distillation, the water and oil are heated to very high temperatures in a still, so both liquids evaporate and the resulting distillate is a liquid suspension of interspersed oil and water molecules. That is rose water.

U can ubstitute coconut for water, mulberries for dates and also cut the entire recipe in half.

Currently I'm pregnant, and I'd love to try a raw diet after I give birth, but I'm terrified of the detox, and what it may do to my breast milk. Any ideas on how I can introduce a high raw diet safely postpartum?
Just start! I know many people fear it, but remember that what you eat the baby eats. Eat as much raw as you can!

Just curious but cashews technically aren't raw so are they acceptable on a fully raw diet?
I'm not sure what cashews you're referring to but in order to get the actual cashew nut out of the shell, the shell has to go through heat processing including steaming or boiling in oil...at least that's what I've read when researching it :)

to save some money only buy the non orgainc cashews and dates, i know, it's sacrilege in the raw food society, buy you can save quite a bit, and it not too bad if you as long as the other ingredients are organic, and notice how much frosting was on that cake, why not cut the frsoting recipe in half,
If money is the problem..or you have a small family..or are single...cut the recipe in half. ENJOY the decadence in a smaller portion. Because I don't have a large family around any more, I tend to make my raw creations in 5-7 inch spring form pans...most raw desserts are so nutrient dense a little goes such a long way - a 5" spring form pan cake can serve up to 8 people comfortably...especially if it's a rich "cheesecake" type recipe. No reason not to enjoy this exquisite reipce! Thanks Kristina!

I agree it's a bit too much, I'm thinking about making a smaller cake and simply using less of the ingrediences, like half of everything. :)
