This recipe turned out so good. I didn't make cupcakes but rolled what I made up into balls. I didn't have any muffin papers as I forgot them when I went out this morning for dried mulberries and raisins. I had all the other ingredients. I juiced this morning and had some carrot pulp leftover about 1.5 cups.. I added about half of a cup of mulberries, some raisins, dates, cinnamon, ginger, and pink salt. I am so surprised with how good these turned out. Even without the icing. Quick and easy bites to grab out of the fridge when that sweet craving hits. Yum Yum!
I made these today. I didn’t have coconut water so I used maple syrup. I added some ground almonds, pine nuts. Plus more spices nutmeg, star anise etc. I kept adding until it was really delicious for me. For the topping I didn’t have enough cashews so I added pine nuts to the topping! I really enjoyed these.
Hi Kristina, I did you them! I didn’t have coconut water but I added only water plus other ingredients it came out perfect for me not too sweet. Delicious. Long time I haven’t done vegan receipts. I have to take care of my sugar levels but ones in a while I want to eat something sweet and why not something close to nature. I order your book so looking forward to try those salads too.

Hi Kristina! I made this recipe last night for my partners birthday and I kind of struggled with this components! The carrot cake itself works great, but had to split the mixture into 2 to get it all blended up right. But the frosting went awry! I did the 3 cups of soaked cashes and 6 cups of coconut water like it shows in your app, and it was very liquidy and didn't blend into a icing, more like a creamer? I took a 3rd of the mixture and added more cashews and blended so it was firmer, but i had to freeze overnight. Was I supposed to put 6 cups of liquid??? Took out of the freezer and tastes divine, just issues with the icing! (I used all the appliances you have in the video as well)

I read this online: "Truly raw cashews are not safe to eat, as they contain a substance known as urushiol, found in poison ivy. Urushiol is toxic. Cashew kernels are often sold as “raw” in stores, but these have been steamed. This removes the toxins. So my question is , I'm guessing the cashews in store labeled raw have been steamed and are safe to eat? Ive always worried about using raw cashews because I have always heard you can't eat them raw. So what is true? Thanks for any replies.

If you see “raw” cashews in the store it just means they’re not roasted and unsalted. They’re still processed to make them safe to consume.
