    I’m vegan for the animals but I always prefer to cook wfpb. This recipe looks delicious and I love the ingredients. I’ll definitely make it because carrot cake is my favourite dessert ( other than fruit). 💚🙏🏻

    I made this recipe after watching the vid, I love the cream over the top which I spread 2/3 of it on the cake and the rest was meticulously fingered to my mouth. My cake came out cooked but a little too dense not fluffy, taste good, well balanced. Tested one piece and figured I had to let it set in the refrigerator to bring out more flavor. I like it and I will make it again to be lighter. I’m in for suggestions. Thank you for sharing

      Thanks for making the cake Albert and for your feedback! If you make it again, you could try adding a little more plant milk and not cooking it quite as long to see if it is softer. It doesn't have any oil, so it's not going to be super moist. So happy you enjoyed the frosting, it's yummy!

    That looks so good. I found a forks over knives cookbook at a library sale but I do not remember seeing this recipe in there. I will have to double check. As always you do a great job in showing how to prepare the recipes.

    Hello there, If I use the oat flour directly, how many cups do I need to add?

      Great question! I have never tried it, but you could start with 1 and 1/4 cup and possibly add another 1/ 4th depending on how the consistency feels to you. ❤

    Hiii. Can you use another sweetener like stevia instead of dates??

      Hi! Thanks for your question! I don't recommend stevia. I would stick with days to be safe if you like them. I'm afraid maple syrup will make it too runny. I've only used dates, 🙏❤️

    I made the cake and the frosting it is super delicious. Is it supposed to be really moist? If it were any other cake I would think it's not done. I cooked it an extra 10 minutes and it still seems too moist. I'm just going to eat it this way. It's still really tasty.

      I'm happy you liked the cake Beth! I haven't noticed it being super moist. You could try using one cup of plant milk instead of 1 and 1/2 cup and see if that helps, along with using the full amount of oats. Thanks for your feedback! 🙏💖

    What do you do with the water from soaking the dates?

      Since you need to add water to the recipe, I'd save the drained off water and use it for better flavor...why waste it? Add it in. Blessings!

    reg Baking soda has aluminum in it, i buy Bobs bcz it doesnt

      Baking powder has aluminum in it, not baking soda. Gefen baking powder is aluminum and corn free. ❤

      Thanks for the question. I have not had a problem with sticking to the glass pan. You could put a little oil on a paper towel and toilet before baking. 🙏💖

      Yes you can use any flour! If you want another gluten-free flour, I recommend Bob's Red Mill all-purpose gluten-free flour. Thank you! 🙏💖

    rice milk is not gluten free
    just sayin
    cashew milk can be sensitive for some

      Rice milk is gluten-free. Rice does not contain gluten . There are lots of plant based milk options: oat, soy. Pea, almond, coconut, etc.

      Can you do macadamia nuts? If not you can eat it without the frosting and it's still yummy!
