Hi folks. Thanks for watching our Carrot Cake video and joining us to celebrate Tim's birthday. This cake is really good and really moist, but I would pair it with a more "Traditional" frosting that is whiter to really contrast the cake. Other than that, this cake was delicious. For the frosting I wouldve used whipped cream! :) Its aquafaba, maple syrup and vanilla extract. You whip it until its fluffy. Also, grind some walnuts with raisins and add on top. I'm sure this was wonderful. Especially, when spending time with the peeps you love.
I think your frosting idea sounds really good. I was not really happy with the way this frosting went on white and then overnight turned brown. Next time, I am going to take your advice and try the whipped frosting. Thanks so much for watching.
I once made an icing using firm tofu... The shelf stable kind. I put a block of the tofu in the blender, vanilla powder, and Jordan's skinny SF caramel pecan syrup (you can use sugar). It was a little thinner than I would have preferred... But it worked! I wonder if corn starch would thicken it???

Thanks so much for saying that. I never mention this in the videos, but I stopped eating meat 14 years ago because of a PETA pamphlet I read. I never went back. I try not to push people into being vegan or not eating animals, but I am hoping that by showing them some of the health benefits of eating plant based, maybe that will put some of them on the right track to eventually become a lover of animals that extends well past the food on their plate. But, it's when I Rescued my Buddy, Connor💙Boy, a Pittie, at 1 Year old, in 2017 and started became more Aware of horrific Cruelty be shown through fb, I looked into his Sweet, People Loving Eyes👁️👁️and said No More, on my part, even though I can't stop the Cruelty done to them or people.

Clever using the apple sauce sans the oil- it worked really well. Love that dandy cake pedestal and dip plate. I like things that do tricks and change like the transformers. I would lick my finger as I cleaned the bottom of the cake..l Ah happy birthday Tim!
Thank you for the cake video. I haven't made anything sweet for dessert other than chocolate nice cream. I like the idea of a individual cupcakes just for fun when you need a quick break from 50-50 eating. I just bought that 1-1 replacement flour blend so may just whip this up. I'm not a baker either!
Hello. WE have that 1 for 1 gluten free flour also. We use it on many things. If you make this cake, use a different frosting. Tim loved the cake but I felt like a cake of this caliper should have a really nice, pure, white frosting. Thanks so much for watching.

Happy birthday Tim!! That cake looks great. You know that tetra-packed silken tofu? You can turn that into a yummy date-sweetened cream cheese icing if you ever make another carrot cake and want to go that route.

My birthday was last month and my husband made a chocolate zucchini cake with no oil. It was quite moist too. It used aquafaba for the moisture part of the cake.

Frosting is tough, and although the one you made is pretty caloric, it does have all natural ingredients, exponentially better than canned frosting or homemade cream cheese frosting! Yes. I will be honest with you. The cake was amazing. All the texture and moisture of a traditional carrot cake. The frosting sucked. I would get a white frosting from the store and put it on the cake. That cake deserved a better frosting. There recipe only makes one cake so if you want a layer cake, double the recipe and use two pans. Let me know how it turns out
Hi Katie. It was a birthday so we wanted to show an option for a special occasion. As far as the cake itself (if you don't make the frosting) there is no fat in the cake. It's made with applause, not oil. So, no fat. There is sugar but its spread out around however many pieces you cut from it, so it's not much. The cake itself is actually allowable on Starch Solution. But, you would totally have to leave the oil out. We had Tim take it work the next day to have his work friends finish it off so we didn't over at it. HA! Thanks so much for watching.
