If you cook the carrots in a pressure cooker with some baking soda they will actually caramelize and taste extremely sweet. I often use that trick to sweeten something without adding sugar.
@@millynewson1450 I usually for 500g of carrot (approx 5 cups) I use a a quarter teaspoon of baking soda. The benefit is the baking soda also breaks down the pectin of the carrots making the puree even smoother. I add a bit of water to the pot to make sure it doesn't stick. It's an adaptation of this recipe by modernist cuisine, I just don't add the butter or carrot juice.
And I just appreciate (seriously appreciate) the recipe in the description box rather than a link to a site overly crushed w ads, etc. Much easier. This is now the vegan channel of choice in this house!!!

Oh my, this is the best healthy cake I've made. Switch it, didn't have enough carrots to puree so used sweet potatoe instead and shredded carrots, instead of dates syrup, I used maple syrup and walla! Yummy.
We made this yesterday with my girlfriend and it was absolutely awesome! I didn’t have carrot puree so I substituted it with apple puree and it worked fantastic. Thanks for all that you do, amazing channel, message, and presentation!

I'm definitely making this!!! Usually I go with fermented or pickled carrots, but carrot puree can be stored in the freezer for just about anything, it never even crossed my mind to do that. This is perfect.
This looks downright delectable. I'm not vegan, but I will definitely be making this cake over the weekend. I've been trying to eat healthier as I get older, especially reducing sugar/carbs, and this recipe looks like a keeper.
@@martinheath5947 The cashews, dates and almond flour are kind of pricey, but you're not using that much...carrots, oat flour [you can make your own in a blender] are real cheap. If you look at the price of store bought cakes, this will come out way ahead and be far healthier...and you can lick the bowl too, lol!

Hi there from France ! just discovered your channel looking for a teriyaki sauce and now i am browsing your videos! so one tip from south west France were our main culture is wallnut! (along with delicious real strawberries won't speak of the abonmination of foie gras ) so in order to preserve the freshness of any nut by the way the best solution is to keep them in the freezer. that way the oil cannot get sour... just looking at your nuts i see that are too old for me to even taste them. you ar right they are the best of the nuts (we do also an incredible nut oil) BUT you keep them in the freezer at the beginig of the season of the wallnuts and you will have the taste all year long of fresh wall nuts! oil has to stay in a fridge and nuts in a freezer ! you recepies look more than awsome and i am glad to hear you say that you fry with brooth! i have been frying with water for years! be blessed
I actually do keep them in the freezer. I will be showing my freezer and fridge in my App, and I will suggest to people that they keep them in the freezer because it keeps them from going rancid.

I like dates. I dont know if I can handles that many. Dates flare up my histamine intolerance. Flaxseed I put alittle in my oatmeal it made my stomach hurt. I would have to find other substitutes for some things you use. I could make this carrot cake for my family though.

Can I use less syrup ? and can I make it into two smaller tins to make a layered cake?

Tiger nut flour would work. A nut free frosting is something I’m currently experimenting with. I anticipate having an option in the near future.
