Raw Vegan Carrot Cake

- Simple and healthy raw vegan, whole food plant based and oil-free Carrot Cake!
Carrot Cake Filling
1 1/2 cups walnuts
1 1/2 cups almond meal
2 tablespoons psyllium
2 tablespoons pumpkin pie spice
1 1/2 cups raisins
1/2 cup shredded carrot
2 tablespoons almond butter
Cream Cheese Frosting
1 cup cashews, soaked 2 hours
4 tablespoons date syrup or maple syrup
1/2 cup coconut cream
2 tablespoons lemon juice
1 teaspoon vanilla extract
To make the carrot cake filling, add the walnuts to a food processor and process until a fine meal is formed. Add the almond meal, psyllium and pumpkin pie spice and process until well combined. Add the raisons, shredded carrots and almond butter and briefly process until the mixtures is well combined and sticky. Press into a parchment lined 7”x7” cake pan. Set aside
To make the cashew cream cheese frosting, add the cashews, date syrup, coconut cream (or full fat coconut milk), lemon juice, and vanilla extract to a blender. Purée until very smooth. Pour over the prepared carrot cake and and refrigerate about 2 hours, or until the frosting is set.
You can stack pieces of the carrot cake after everything is set to create a layered look or enjoy it as is!

That's so amazing I can't wait to try this, I love carrot cake so much and this looks so delicious 😋 and probably so much better for you than the real ones when you think of all the sugar. I went to get a carrot cake from a whole foods bakery lately hoping that it would be at least a little bit "healthier" but actually the baker there informed me that it in fact was not, it was just a regular cake, while maybe a bit "cleaner" than you'd get from a regular store, still just a cake, not healthy 😢 I was gonna look to see if I could find a bakery that makes raw vegan desserts.

I’m not a vegan but I would definitely make this. I know the amount of cream cheese and sugar that you need for the traditional one is so much sugar and dairy…. Healthy option… and different….

I had a question on the double layers. So do the base and the cream refrigerated ...
then repeat recipe and add another layer of each the base and cream plus refrigerate again right?

Concierge Sirocco hi! Yes you can freeze almost all raw vegan desserts well. It will not affect the shape. Defrost it in your frig. Add more carrots just make sure the mixture is still moist and sticks together!😊
Everybody adds coconut cream from a can..... I don't believe for a second that that is raw.... it will be pasteurized before it is preserved in the can.... so why nobody seems to realize this I don't understand.

@@PlantCraft I'm sure, I'm not making a judgement here... but I am wondering why call it RAW if it isn't. As I have to watch a hundred recipe videos for one thing, that is misleading...

Yes!
I tried this tonight and it got stuck in the back of our throats on our tonsils. It has a good flavor but we had to add applesauce to make it less sticky in the throat. It’s not that it’s dry so much, not sure what it is.
The applesauce takes away from the flavor of the cake though.
I wish I knew how to remedy this.
And we didn’t think it was sweet enough n added honey on top. I also added a bit more lemon to mine.
It’s not great but not horrible either.
Its not amazing like other raw vegan desserts I’ve had.
I think my favorite is cherry date fig pie with a salty nut date crust
And a strawberry sunflower seed dessert that I make.
I don’t remember where I got the recipes.
I think I got the cherry one from fully raw Kristina when she first started out.
My husband loves desserts so the carrot cake won’t go to waste.
If it were terrible he wouldn’t eat it.
I’m pretty good usually at fixing things but this one is beyond me.
Unless maybe I could add more raisins n psyllium husk.
