I'm so excited to share with you a healthy version of 3 of my favorite desserts: cheesecake, tiramisu and carrot cake. These easy desserts do not require any baking and can be made ahead of time if you're serving them for a special occasion such as Valentine's Day. All 3 of these healthy desserts are vegan and gluten-free. So anyone can enjoy them!

I made the cheesecake bites using blueberries and am waiting for them to freeze right now. But I tasted the filling (of course) that was leftover in my blender and oh my word...heaven.

I absolutely love how so many vegan desserts just involve you throwing your ingredients into a blender or food processor and waiting for them to freeze or chill in the fridge

I made the tiramisu and the cheesecake and the tiramisu came out amazing. The coffee makes a big difference. I put it in my batter as well as a good dusting on top and it tastes really close to the real thing so I wouldn't say to leave it out. The cheesecake was so so but was still good. I would definitely recommend making the tiramisu. Thank you so much.

So far I have made the Raspberry cheesecake - I made a few tweeks to the recipe. I used Blueberries & Strawberries too and add a bit of Flax & Chia to the mixture. I also subbed a bit of CoYo (coconut milk yogurt) for coconut butter. Turned out amazing & were a big hit. It is also a great way to control portions. A+ Thank You!
