Dried noodle: Kuy Teav Kola with basic traditional topping

  • INGREDIENTS
    This is my grandmother traditional Kuy Teav Kola in Battambang City. She used Phnom Penh style small size flat rice noodle- fresh or dry
    SAUCE TO COAT THE NOODLE
    sweet soy sauce
    black soy sauce
    soy sauce
    garlic oil
    The flavor of the sauce should be mild, not salty. Sometime you may not need to add any sauce to Kuy Teav Kola since some the topping are already flavorful and has salty agent in them such as dried shrimps and preserved dry daikon. The noodle itself are also lightly flavored too.
    TOPPING FOR THE NOODLE
    dried shrimps
    sweet and sour pickled cucumber(cucumber, salt, vinegar, sugar)
    preserved radish(it add crunchy taste and flavor to this dish)
    roasted ground peanuts
    hot chili optional
    bean sprouts
    your favorite herbs such Asian Sweet Basil, cilantro ----
    lime juice optional
    top it with soy sauce or prepared fish sauce
    FISH SAUCE RECIPE for topping the noodle
    3 cups water
    1 cup sugar
    1 cup fish sauce
    1 cup vinegar
    In a small pot on medium heat, bring all four ingredients to a gentle
    boil . Stir for 1 minute ,removed from heat
