    This is what I admire about the USA. I'm not American, but I've always felt that the US is like a library of the world. People from all over the world arrive and share their knowledge and skills with their new Homeland. It allows America to experience many pleasures and flavors from different parts of the world.

      To read this from someone who isn't American -- in a time when many of us are ashamed/frightened to be American -- is immensely comforting. Thank you!

      I am american, and I agree. Frankly, it's what I love most about this country. However, I'm fearful of our future here in the US with regards to new immigrants and what rights they'll have if they are even allowed in... Its a really disgusting period in our history right now. But every american should read what you wrote... we are special BECAUSE of our diversity and there is no need to wage war upon it. My love from the US, avienblue!

      Getting into this country legally was never easy or simple. It took my family 2 years. It takes others even longer just to get a visa. Again, nothing new. Hopping the border doesn't make you an immigrant. It makes you a criminal. I guess it takes somebody who entered legally to really appreciate that.

      That’s actually what sucks about being American- people lose touch with their roots in a melting pot society. Most of us have no clue about our family histories outside of DNA tests.

    Cambodian 'breakfast' soup is easily one of my top 2 noodle soups in the world. I traveled there for like a month and I wanted to have that soup 24/7. It's just perfection. My mouth waters just thinking about it!! Lovely country, delicious food and one of the most tragic periods in history, and yet one of the nicest, warmest people you'll ever meet. Very beautiful work this chef is doing and all the thought and soul she's putting into it!

It's very hard to put into words my experience while I was there, but I immediately felt like I was "home" when I arrived at my father's village.

    • @pinkmonkeybird2644
      @pinkmonkeybird2644 3 года назад +1

      I don’t think she ever wanted people to forget the negative events, rather, she wants to give people a comforting memory to start the conversation to heal the wounds from those negative times. In her case, she’d use food that her parents enjoyed in Cambodia to make them remember good times. Once they were reminiscing, they could then explore with a more open heart. I cannot imagine the horrors they witnessed and what they had to do to escape Cambodia and rebuild their lives, but it has to weigh heavily at times. It should never be forgotten, but you do have to move forward. She is using food as a way to heal.

      A lot of south eastern restaurants list as Thai/Vietnamese as that's more popular and will bring people in--even those that specialize in Cambodian food. Same with Laos restaurants. Ironically most owners of authentic Thai places are actually Laotian because they share so much in culture. You just gotta go in and check it out to see if it's authentic or not.

    Hearing her describe using authentic food as a means of starting a conversation with another generation traumatized from war was legitimately powerful. Oh and the food looked delicious.

    Cambodian food is the most under rated Asian food. It has an intense and combination of flavors! The best!

    The Phnom Penh noodles are somewhat widely available in Southern Vietnam by the name "Hủ Tiếu Nam Vang". Usually there they add also pork liver and heart with a quail egg. Good stuff.

      Southern Vietnam used to be Souther Cambodia. Maybe the French can explain about the politic side of the story on how it happened. But, I’m just giving you the FYI why PP noodles was widely available in “Southern Vietnam”. If you’re Thai and you want some noodles you will make the famous boat noodles. If you are Vietnamese and you want some noodles you’ll make Pho noodles. I hope you got that
