Magnolia and Rhubarb Spritz | Magnolia Vodka | Rhubarb Cordial

- This is my recipe for a rhubarb and magnolia spritz. We start by making a Magnolia infused vodka then making a non cook rhubarb cordial.
The Rhubarb cordial can be used as it is with just sparkling water but I find that the flavour profile of Magnolia is very similar to ginger and therefor a marrage for the rhubarb
INGREDIENTS
1kg Rhubarb for 350ml Juice
350g Sugar
1 tsp Vanilla Extract
10g Citric Acid
200ml Vodka
20g Magnolia Lilliiflora Petals
- Infuse the chopped magnolia petals with the vodka for 4 - 24 hours
- Blend the rhubarb to a puree with 100ml of Water
- Pass through a fine sieve
- mix with sugar, vanilla and citric acid
-to serve
30ml Magnolia Vodka
60ml Rhubarb Cordial
top up with sparkling water
enjoy over ice.

Such a great thing to have in the fridge - try setting it in a jelly and serving it with vanilla ice cream - rhubarb and custard !!
