    INGREDIENTS
    - 250g Strawberries
    - 250g Rhubarb
    - 250g White Sugar
    - 30ml Lemon Juice
    - 1 cup of water
    METHOD
    1. Combine the strawberries, rhubarb and sugar in a glass bowl. Ensure that the sugar is coating all the fruit
    2. Let it sit for 2+ hours (or overnight in the fridge)
    3. Transfer the contents of the bowl to a saucepan and place on high heat
    4. Add the juice of one lemon and 1 cup of water to the saucepan
    5. Turn the heat off once it starts to foam
    6. Let cool and strain into a sterilised glass bottle

    You can chop up the rhubarb before freezing. It can save a step!

    now that you've said to not waste the sweetened solids and one of the options you gave was making jam, it reminded me of that's just the way my momma makes it. just mixes fruit with sugar, lets it get all the moisture out, and then just boil
    besides, if you do transfer it while still hot, and seal it well enough, the heat itself will further/re-sterilize the bottle. learnt that from making jam, lol. still got a bottle of a pear-apple one not spoiled after several months

    I do something similar to this with any leftover berries when they're in season. Put them in a pot with some sugar, cook for a while, strain out some of the liquid for a syrup, cook for a while longer until thick for a jam/conserve type thing. You get a syrup for a cocktail and jam on toast for the morning after. Great video!

    I just got a bartender/mixologist job at a high end bar in my city even though I’ve never been a bartender before, only home bar, but All I learned thru the years is because of Steve, the Educated Barfly, Anders and the other RUclips channels, I didn’t need to go to bartender school, I learned from the best!! The cocktail director at the bar saw my instagram page and was impressed, I’m starting tomorrow! If you could give me advice on something what would it be?

    I just inherited a garden with rhubarb in it, so I’m going to have to give this a try! Also worth mentioning, you use the stalks only, as rhubarb leaves are known to be toxic.

    Learned so much from you it’s insane mate, thank you! If I was looking to do strawb/watermelon cordial would I need to adjust weights or would 2 parts fruit to 1 part sugar work as a formula across the board? Cheers

    Hi again Steve. I have made this now to your precise recipe. It made 500ml. I now look forward to seeing what uses it has. I would imagine it going well with gin and Hypnotiq. Maybe with some rum and a little Allspice Dram and / or Velvet Falurnum. Nick from York

    @2:52 you could have stopped there, added 250ml of vinegar, and after a week in the fridge, you strain out the fruits and you'd be left with a wonderful rhubarb strawberry shrub!

    Stumble upon this wonderful channel because of Kevin Kos, I'm gonna ask if it is ok after the boil to wait for it to chill and proceed to blend all of the rhubarb and strawberry fruit then filter it? would it be bad? or would it be super sweet since it's a 1:1:1 ratio of rhubarb:strawberry:sugar?
    I'm still in the process of learning it before I get my proper place to make these wonderful things thanks.

    I actually preferred your old studio to the current set up. The sound was better, the lighting was better, the bottle wall was a cooler backdrop.
    But, you do you. Still solid content, even if the new locale doesn't work for me :)
