    Hey folks, for a change I'm making a zero alcohol home brew recipe today of rhubarb cordial, or rhubarb squash to some of you, alongside this, I'll be making some rhubarb jam from the waste products that don't make it into the cordial, making this a zero waste recipe.
    After picking 1 kilo of rhubarb it is boiled in 1 litre of water, before being strained, the strained liquid is then reboiled with 1 kilo of sugar until it dissolves, lemon and lime juice are added and this becomes the rhubarb cordial.
    The solid rhubarb matter which is left in the filter is then weighed and boiled with 100ml of water and the same weight of sugar as there was rhubarb matter. This becomes the jam. The recipe is extremely simple and I'd encourage anyone to have a go at this using any kind of fruit.

    The rhubarb solids leftovers would probably work really well in homemade ice cream, and may be even bread! I make a similar cordial with Grapefruit, i put the peels with some sugar for a few of hours to make an oleo saccharum (sugar syrup) then gently heat the grapefruit juice with sugar and water, add the syrup in to that, give it a shake and bottle-up! always comes out really good. Bloody marvelous with cold lemonade and ice.

      The home made ice cream option sounds lush, definitely one to try in future, I think it would be too wet for bread. I love your grapefruit cordial idea, that's one to try!

      maybe drying out the Rhubarb a bit, before adding to the bread mix!

    Ah, doing a Rhubarb cordial without sugar eh? That's clever, very clever indeed my good sir!
    I never knew you able making jam with rhubarb. I wanna buy that baby in form you! XD
    That cordial looks like fusion of Vimto with pinky Rhubarb color and hint of innocent you get in the store.
    I heard leaves is toxic to humans.
    Question: Why is Rhubarb pink when you drain it form fruit and what if you overcooked it?

      There was sugar in there Aaron. I don't know why it goes pink when you cook it, it must be the dominant colour from the skin. If you overcook it, it just turns to mush.

      Yeah, pink is like normal color like Raspberry, Strawberry and Preach also?
      Speaking of, does Rhubarb, Strawberry and Raspberry mixed well when you making something other than brewing?
