  • Home Brew: Summer Garden Fruits Wine @ 10.5% ABV FULL FILM from Ingredients to Tasting: • Home Brew: Summer Gard... .
Hey folks! In this film, I'll be making a mixed fruit wine, using only fruits from my own garden. Within this wine are the following fruits: rhubarb, gooseberries, plums, apples, strawberries, blackcurrants and raspberries.
I use 2kg of fruit, which I steam and then push through a sieve to extract a pureé. This is then strained to extract the liquid and to it I add spring water, 800g of dextrose monohydrate brewing sugar, pectolase, Lalvin EC-1118 yeast and Young's yeast nutrient.
The wine must is fermented for 18 days before I add finigs to attempt to clear it, which is unsuccessful.
After this the wine is bottled and left to condition for several weeks.
Upon opening and tasting the wine has a delicate sparkle, but is medium in profile with a creamy and fruit berry flavour. It is a very delicious wine and one of the est that I have made flavour-wise.
The film includes all stages of the brewing process from picking the ingredients to opening and tasting.

Could try adding pectolase to clear the wine. Think you need twice as much after fermentation. Great video, good effort.

Hi Zoe, I do usually add pectolase, but I can't remember if I did in this batch or not, I need to re-watch the film, I don't uually add after fermentation though, so that's something to consider. Cheers!

Not yet…but there’s every chance it will happen at some point. Have you made them?

When you pour from one jar to the other, do you not worry about aerating the brew?

There's a chance it can do harm, but honestly it's not happened yet, so fingers corssed it will contune not to happen.

It's fine for a wine in the early when it has a lot of co2.
