Never again did we have it, we live in Argentina and here it is wildly expensive, but I wanted to surprise him for his birthday. The Octopus must be cooked starting from cold water. This Is fondamentale to get a "tender" result...and, when ready, It must be left into his cooking water until It returns cold...

I cook octopus quite often as it is my favourite dish. My favourite recipes with octopus are the Portuguese style salad and obviously THE monument of Spanish cuisine the pulpo a la Gallega so your recipe will now be in my repertoire ! Something very important when you cook octopus is that consider that a good one third of it will ‘ disappear ‘ . I weighed them few times before and after boiling and always come to the same figure so it is to take into account for the quantity needed like if you need a kg of cooked octopus you will need a 1.5 kg one . Also as you said the European ones are really good especially the brand ‘ El Rey del pulpo ‘ , really top quality .

Great recipe! I cook it every now and again. Each time with a different twist like dash of wine or off piste herbs. Always turns out amazing. It's hard to cook bad octopus in my opinion as long as you put some heart to the whole process. Never missed adding cork though :)

The belief is that the cork will release enzymes that settle between the octopus’ particularly long protein chains, thereby preventing clumping and guaranteeing tender meat. But there is a catch: corks are treated and boiled before being used to seal a bottle due for hygienic purposes. The often quoted recommendation to use a white and not a red wine cork does not change this.

Second question is if it was fork tender coming out of the boiling water, how does grilling it longer not overcook it just for the sake of a "grill flavor"? It’s actually easy. About 30 minutes boiling per pound. Hardest thing is finding octopus. I buy it in Asian supermarkets
