I just love your recipes and teaching methods. You always make everything sound doable and inviting. I should mention that I am 67 years old, and I’ve been a home cook since I was 15. Living in Melbourne Australia, there’s a huge time difference between our countries, but I never miss an episode. Here it’s winter of course but your wonderful salad is fabulous all year round. Add some wonderful crusty bread and you have a feast. The added beauty is that most of us would have the ingredients handy at home. Thank you for all your hard work, positive attitude and bright personality.

Made today and very nice. Next time I won’t use the top shelf in oven however, the peppers got charred in the centres before becoming fully soft around the edges which made peeling difficult. Also included some eggplant and mushrooms
This recipe has been a favourite of my family for a very long time . But I use whole olives , I find their flavour more potent . And I don’t always add pine nuts .
I have a question - what is the Costco price for pine nuts in your area? A small Costco bag here in Canada costs $45 now so it’s not an item for a budget. Could you use something like roasted pistachios as a substitute?
Dimitra once talked about Dodoni Sheep's milk feta as being good. Also, it comes in a block and that's how she recommends you buy it. Trader Joe's has a good sheep's milk feta, too, if there's a Trader Joe's where you live.

Walnuts are probably your best substitute and are often used as a substitute for pine nuts in making Pesto as well.
