Tried this today and it turned out heavenly!! I didn't have baby potatoes so cut Maris Piper potatoes into wedges, boiled them then pressed them lightly with a fork. Thank you Dimitra! 😊

These were so bomb Dimitra, I have made them twice this past week. Family loves them. I added a little chicken bouillon powder to the marinade with some onion powder and garlic powder. I also cooked the potatoes in my IP for 12 mins. Those were my only changes and these will be in my weekly rotation for sides.

Can these be made and baked later? As in prep everything up to smashing, set aside, then do the oil/butter/spices mixture over the smashed potatoes and bake? OR how best for reheating?
@@nataliet129 I appreciate your concern but truly nothing to worry about. A 2 second contact is hardly worrisome. And not all paper towels are created equal.
Great recipe. But RIP to those baking sheets. And using butter just burned the herbs, olive oil would have prevented that… but not broiling it for five minutes would have also stopped from burning parts of the top… and I shutter to think how burned some of the edges and bottoms are on those potatoes!!!

I feel like a lot of times when I mix garlic and lemon juice, the garlic turns greenish blue from the lemon 😕 . How can I avoid that?

I think that capers work on this dish. Something like a piccata.
I use two paper towels folded to smash them. I like to feel the potato, gives me more control. Your way is smart too.
Paper has glue and chemicals not a good idea
