Made this tonight, very tasty but it did take quite a while to make. A lot of steps. Might add olives and mushrooms to filling next time.
Tip: choose wide eggplants, mine were long and skinny so couldn’t fit as much filling in.

I wish I can show the photos,today I made this scrumptious great of the greatest recipe for my family,😂guess what ..my husband goes nuts ...he absolutely loves it sooo much !!He said like this :”It’s melting ..”But I can tell his heart also melted😁,actually I made 8 rolls from one giant eggplant ,he finished 5 !I got only 3 😓(Don’t worry tomorrow I’ll make again) and initially he was eating it with yogurt 😧(was that correct way to eat?) thenI told him my lady (forgive me )suggested with toasted bread ..he immediately got up to toast the bread said :” I can see it !!!!I must listen to her she is right...”😅😅...Tomorrow I have to buy more eggplants,my husband never eat eggplants unless this way or moussaka ☺️BTW the homemade red sauce is fabulous!!!I think I also can input this excellent red sauce top up to my cabbage rolls ,my husband is crazy for cabbage rolls too 👍🏻👍🏻

I made it last night and everyone in my family loved it. I roasted the eggplants in the oven instead of pan frying and even thought I had brushed both sides with oil, some got stuck on the foil. Also, the eggplant slices became too soft. How to I cut the eggplant so each slice is even?

Have You ever used greek myzitra cheese with spinach for fillings have You heard about kopanisti?Anthotyro?
Yes, I love myzithra and xinomyzithra cheese. It's hard to find in Houston so I substitute ricotta and feta cheese. You can use myzithra instead of those two cheeses.

Hey. We cook in Russia like this.
Very simple and quick to prepare rolls.
✔ Prepare the filling:
▪︎oil fry with garlic
▪︎ add grated cauliflower
▪︎ remove from heat and cool
▪︎ Add cauliflower to green onions, parsley, mascarpone, grated almonds, salt / pepper to taste and apple cider vinegar
✔ Cut the eggplants into thin slices
✔ Fry on both sides in coconut oil
✔ Put the stuffing and wrap roll.

I made this yesterday for dinner and loved it. I t was surprisingly easy to make, but I might oven roast the eggplant next time. This is a wonderful low carb recipe, too.

I have a greek style couscous salad recipe up on my channel. I taught it a while back, but it's delicious! Just cook the eggplant as I did in the video, and make sure it is cooked all the way through. Add the couscous salad instead of the spinach mixture and roll.. Very tasty!! No need to bake it.

No, you can use any pan that you have. I love using cast iron because it retains heat beautifully :)
