Does it matter that you dont fry/dip the flour tortillas in oil? Years ago i made a similar dish with flour tortillas and the tortillas were mushy and distracting. I would love for this recipe to work bc dipping the tortillas in oil can be a messy step.
I don’t think it’s necessary, no. Ours turn out crispy after baking them in the oven, and/or you could always put it under the broiler for a few seconds as well. The leftovers might not be as crisp the next day, but they’re still great! ❤️
NEVER FRY FLOUR TORTILLAS to make enchiladas. O ly corn. And it isn't frying them its softening them so th corn tortilla doesn't Crack. The oven crisps them up.
The recipe calls for cooked, shredded chicken. I usually cook mine ahead of time in the crockpot but you could also use a rotisserie chicken for a quick option.
We prefer using larger, flour tortillas so the filling doesn’t seep out, but you can definitely use smaller ones or corn tortillas if you want. Also burritos aren’t typically covered in a sauce which is why we called them enchiladas.

I used fajita shredded chicken that was pre cooked already. Turned out really good
