Cream cheese is a great base for many many dishes. I even use it for my green bean casserole among many other dishes. It’s very kidney friendly compared to other salty sauces with too much cheese. And since you can separate some into another pan, this is a great way to cook all of the enchiladas up, and then add your cheese and other sauces or spices (salt...etc...). I find cream cheese is a better alternative than making sauces with flour as well. Milk and flour are kind of tasteless and just an unnecessary mess to make with extra gluten (even if you aren’t gluten intolerant...). Cream cheese and sour cream can be used together or separately for bases to many sauces or fillings. And it’s such an easier way to thicken something up instead of using flour, such as in macaroni and cheese from scratch. I just add whatever other cheese I like and the cream cheese just compliments any other kind of cheese you end up using. It’s never stronger tasting, in my opinion from all my experience using it. This would be much more kidney (and heart healthy) friendly if the salt wasn’t used for the chicken. There’s still ways to make your chicken taste good without using a ton of salt. Crock pot really does a nice job of making any type of chicken shred well.

I'm assuming you used store bought enchilada sauce since you skipped that part. Just add chicken stock to that filling recipe and sub the cream cheese for sour cream to make the sauce guys.
I’m like multiple other viewers ! What is the sauce you use to top the chicken and cheese enchiladas! It can’t just be a white sauce or it would be missing ingredients for flavorings! But it does look delicious
It's heavy whipping cream. I added diced chilis to mine. It's a little on the bland side without some kind of spice in it... Jalapeño juice added, in addition to green chilis would be good.
To me, when people use flour tortillas, they are making burritos. Enchiladas are made with corn tortillas. I used to live close to The Mexican border in Chula Vista and I've never gotten flour tortillas when ordering enchiladas. It's always corn. The filling looks yummy and I will definitely try that.

What temperature were you making the creamy sauce? The oil and onions? I feel you left off too much to make the sauce. Temps, what oil, etc.. etc.. What liquid? water? Stock?

Sorry I am not Amy but once you braised the onions and garlic you break in the cream cheese but turn your stove down so the cream cheese does not burn, then you mix it in gently with the onions and when melted add your green chili which once mixed you will add to the chicken that has been chopped up, then you will spoon it on to the tortilla and roll it.
Not bad. Need to make your own tortillas and once you cook them, put enchilada sauce on a plate and dip the tortillas in them. Add the filling, etc, etc. You're on the right track though.

My aunt uses a can of cream of chicken instead of heavy cream, i used evaporated milk, but i was like SMH, cream soup why didn't i think of that. lol

Your recipe sounds good, but I will make your recipe with corn tortillas. I am Mexican, and Mexicans use and prefer corn tortillas.
