That’s exactly how I make chicken enchiladas with one exception, I add small diced onions to the inside of the enchilada with the chicken and cheese. Yum! So good!
Had to come back here and comment. I made this today and my 5 yo daughter devoured it. She even asked if she can have the leftovers for lunch tomorrow which rarely happens. It was super easy to make and a hit. This recipe will be in rotation. Thanks for sharing.

Liz, I think you mean Mexican or Tex-Mex oriented. Spain is on an entirely different continent. It’s like attributing Great Britain for cooking American 🇺🇸 recipes. Same language doesn’t equal the same culture or country.

Looks very good!! I love how the sauce looks minus the chilies. I also use the microwave if corn tortillas are dried out. Also, if you prefer flour, the soft tortillas will be slightly mushy on top if you heat sauce on top of them in the oven. I like to use a flour tortilla that is thinner and a little see through but not to be confused with the cookable kind.

I want to confirm that this recipe is bomb. The only changes I made is I cooked the tortilla in the sauce and added some salsa to the sauce .. I may have just made more work for myself but they didn't fall apart. Stayed together perfectly.. and my husband told me they're the best enchiladas I've ever made..

No offense Liz, but her food is usually Tex-Mex and Mexican. Spain is in Europe and it's another country all together not Texas or Mexico. 🙏

I've tried a large can of green enchilada sauce and a container of either jalapeno or green chili dip. It was pretty good.
