I always said Mexican restaurants would have to be the best to make a profit because you can make hundreds of dishes with basically meat, cheese, rice and tortillas. Here is a perfect example that you make either a burrito or an enchilada just based on how you fold or roll it up.
I made these for dinner at the request of my family requesting chicken enchiladas! It was easy, I had all the ingredients so why not? They turned out fabulous and delicious . I did not wrap like a burrito, I rolled them like an enchilada, open ends. Needless to say they are now part of my rotation, second time my family asked for corn tortillas over the flour. Everything else I followed exactly and still delicious. I boil boneless skinless chicken thighs in salted chicken broth - breast are just too dry for our taste. The thighs are moist and delicious. Cooks quickly and shreds nicely. THANK YOU SOOOO MUCH THESE ARE EASY and delicious. I am a pro now 😜don’t have to look at the video or ingredients because I’ve made it so often😁☺️

I made this with ricotta cheese in addition to the sour cream and Monterey Jack. I skipped the cream cheese and my brothers wolfed it down. They loved it! Thank you for the recipe!! It is excellent!!
I just stuck mine in the oven. I used both corn and flour tortillas because I like both! Taste testing before cooking says I'm in for a real treat! ....Ok, just finished the one minute broil. They look so pretty! I had to take a picture or two. Brb, I'm dishing it up for the two of us. We are done eating now. Like everybody else said... these enchiladas are to die for! Rich delicious flavor! We give it 5 stars! Woo hoo!

My friend, a great chef at only 35 (grandmother trained) opened his own restaurant this last year. He named it after her- Restaurant Christine in the Wallingford district of North Seattle. His flavors were so unique and delicious, it inspired me to do more cooking from recipes. Yours is the best- a restaurant quality keeper! I've never made such good enchiladas! I will be sharing a lot! ♥🥇

I added something new and it was so good. It just kept getting better! I can’t wait for dinner. It’s in the oven right now. How dare you make burritos instead of enchiladas! lol!! I can never believe some of the comments. I will. It probably wasn’t meant with harm. I absolutely love your videos. Such great food.
I agree with Tess. You can heat them up directly on the stove flame flipping constantly. You'll get a light toast on them. That should help them keep from getting overly soggy. I would just assemble them one by one while they are hot so it's easy to roll.
This is the exact recipe I got off AllRecipe back in 2007 called Wit’s Chicken enchiladas. It is a family favorite I have made since. Anymore I despise recipe links due to all the pop up adds. Also long videos. I find myself sticking to my cookbooks more and more because I don’t like interruptions of advertisements that are like a annoying salesman at your door.

I've used flour tortillas before and they.get too soggy. How do you keep them from getting soggy. I now use corn tortillas and they do better
You can lightly toast them in a pan before stuffing and rolling. You can also use corn tortillas in this recipe. Thanks for watching.

I use corn, really like better, no gluten either which I sure don't need.
I heat my flour tortillas on an open flame with my gas stove... Definitely works better than microwaving IMO
