ASSORTED BUTTER COOKIES (ONE DOUGH, 3 DIFFERENT COOKIES)

INGREDIENTS
1 1/2 cups of unsalted butter at room temperature
1 cup + 2 tablespoons of icing sugar
1 1/2 teaspoons of vanilla extract
3 egg yolks
3 cups of all purpose flour
3 tablespoons of finely chopped pistachios plus extra for decorating
2 tablespoons of cocoa powder
200 g of milk chocolate
100 g of dark chocolate
150 g of white chocolate
1/3 - 1/2 cup of finely chopped mixed nuts (hazelnuts,almonds,pistachios)
unsweetened designated coconut for decorating
1 1/2 tablespoons of vegetable oil
DIRECTIONS
beat the butter and icing sugar together for 1 minute, scrape down the sides of the bowl and mix it for 1 more minute, add the egg yolks and vanilla extract and mix to combine, now add the flour and mix until the dough comes together but do not overmix.
remove the dough from the bowl and divide it into 3 equal pieces.
leave the first one plane, add the 3 tablespoons of finely chopped pistachios into the second, and add the cocoa powder into the third.
shape and cut them as shown in the video and then put them into the fridge for 30 minutes to harden.
bake them at 350 F for about 20 minutes or until lightly golden.
remove them from the oven and let them cool completely.
for the first plain cookies dip them into the melted white chocolate and top them with the coconut.
now melt the milk and dark chocolate and add the vegetable oil to it and mix to combine.
dip the pistachio cookies in it and top them with chopped pistachios.
for the remaining melted chocolate add 1/3 to 1/2 cup of finely chopped mixed nuts and mix to combine.
dip the chocolate cookies in it as shown in the video.
now put all the cookies in the fridge for several hours to set and then enjoy .
