Hit The Kitch with Molly Baz as she makes her viral Pistachio Brown Butter & Halva Chocolate Chip Cookies. Something you should know about Molly: she is NOT a fan of chocolate. So it was especially silly when she released her first ever choco chip cookie recipe a few weeks ago and the internet went absolutely bananas for a cookie she doesn’t even like! Ingredients :
PANTRY
¾ cup raw, shelled pistachios
½ cup plus 2 tablespoons packed dark brown sugar
⅓ cup granulated sugar
1 tablespoon vanilla extract
1 teaspoon kosher salt
1 cup all purpose flour
½ teaspoon baking soda
3 ounces halva (preferably pistachio flavored)
3 ounces dark chocolate (not chips)
DAIRY

Thank you Molly for bringing back a memory of my Grandmother... She hated chocolate. This video reminded me of the time we went and got ice cream bars from a gas station or super market in Nebraska one day, and I distinctly recall my Grandmother biting the chocolate off of the Ice Cream Bar and spitting the chocolate part out of the window. It was hilarious at the time and brings a smile to my face now. Thank you for reminding me of that moment.

Had no idea what Halva was. Had to look that one up. I can't imagine hating chocolate. It's one of the best things on this earth. The cookies look wonderful.😊

That's why she developed the cookie without the chocolate first. Theory being added chocolate can't actually make them taste worse...

@@CK-ou3es Her entire job is not making cookies, nor cooking with chocolate. She made them because she enjoys making things others like. I'm sure off camera she tasted them during development - she can still know what they're supposed to taste like even if they are not her taste preference.
The cookie looks good. I want to try this. For someone who doesn't like chocolate, it's nice of you to make them for people who do.
People definitely taste different things when they eat food. I am totally neutral on avocado, but my wife loves it. Both of us love dark chocolate, but I couldn't care less about a chocolate cake. Some people can't eat cilantro because it tastes like soap. I find it fascinating, but I also wish I could taste what it is that my wife loves about avocado.

To me avocado by itself has literally no flavour. It's just a mushy thing meant for guacamole.
For cookie shaping post-bake, you can also place a cup with a circular rim over the cookie and give it a swirl
When do you add the dill?
The fact that Molly didn’t eat her own cookies is a little obnoxious but also very Molly-y
as general policy, i find contrarians exhausting and avoid them when possible…and then there was molly.
Recently discovered Molly Baz and made a couple of recipes featured in videos. This one feels rushed and the vibe is odd, maybe because of the chocolate? Ha

@@ryanstead1312 measuring/ baking with a precis, digital scale is a fairly new thing and isn't necessary. My mom had a small business doing gourmet wedding cakes way back in the day before it was a "thing". She has never owned a scale.

@@AdamC2013 they're very butter-heavy and soft; I would say that if you plan on storing them room temp, let them sit out for quite a while before putting them in a tin or jar and they'd probably be alright for 4-7 days. Any longer than that and I would either freeze them or freeze the dough and just make small batches as wanted.
I don’t love chocolate, but I don’t hate it. I think the chocolate/pistachio combo works really well. How could a baked good with browned butter not be good?

I love, love, love chocolate and these cookies look amazing.
Made this today. A few things to watch out for: 375 was too hot for me. Burnt the first batch of cookies. I tweaked it by baking the dough at 350 for 10-11 mins. Used milk chocolate as topper to cut through all the salt and bitterness of the dark chocolate . I skipped the sea salt flakes as it made the initial batch too salty.

My batch of Molly's cookies turned out beautifully... like magazine worthy. I made my own vanilla halva, used valrhona chocolate, and let them sit in the fridge for two days before baking.. Because of my allergy to all nuts, I used pumpkin seeds instead of pistachios. They tasted awful! Like an extreme health cookie that was trying way too hard, but just more blah than what it was aiming to be. It must be the substituted pumpkin seeds, because I cannot imagine Molly meant what mine became.
Yeah must be that because I’ve had chocolate chip halva cookies from a bakery (big pool of halva in the middle, no nuts) and they taste amazing, so those parts of the equation definitely work together. So maybe just skip the nuts/seeds entirely, I can vouch that they’re not necessary flavor-wise.
Make it again without any nuts or nut substitutions.

Either Molly's oven is significantly off, or they've posted the wrong temp and time for these cookies, as there are multiple reviews noting that they burnt when baked at 375°, and mine burnt at 10 minutes at that temp when her instructions say to bake for 12-14 minutes.
Ice cream scoop = quarter cup (60 ml)
60 ml scoops x 10 minutes @ 375°: incomplete spread, resulting in a cakey, tall cookie; burnt edges, burnt chocolate, halva either burnt or melted into dough. Consistent result twice. Pistachios toasted to brown and looked like peanuts.
45 ml scoops x 10 minutes @ 350°:
Much better spread, halva is toasted but not melted into nothing, 6 fit onto my tray and they no longer feel too big to be a snack. Crispier edges, any chocolate that spread to edge slightly burnt, soft sunken center. Pistachios maintained colour on top.
45 ml scoops x 13 minutes @ 325°: most minimal toasting of halva, pistachios remained green, excellent spread with slight sinking in center, no burnt edges or chocolate.
·Molly, edit your video! I'm assuming you meant to say 325°x12-14 minutes because that is the only way mine baked properly. Tons of comments here with burnt cookies.·

Molly, you might want to scoop your dough first then refridgerate overnight so you don't have to struggle scooping rock hard dough. thats what i do anyway.

This dough is too loose when it's freshly made, actually. It's the loosest cookie dough I've ever made. It's fine to scoop from the fridge; when I was doing multiple batches I kept it in the freezer in between because it's quite sticky.
How many cookies does a batch make? I can’t tell how big the scoop is.
An ice cream scoop is 1/4 cup, but those were too big in my opinion. Grab a 1/4 cup scoop and scoop these until 3/4 of your scoop is loaded and you can do 6 to a tray you'd get 12 cookies per batch with that.

Halva is a type of confectionery originating from Persia and widely spread throughout the Middle East and India. The name is used for a broad variety of recipes, generally a thick paste made from flour, butter, liquid oil, saffron, rosewater, milk, cocoa powder, and sweetened with sugar.

It's a Persian/middle eastern type of sweet snack so you can find it in Middle Eastern grocers or even our local supermarket has it in the Middle Eastern product aisle 😊

Where do you find halva?? What does it taste like?
It’s like a sesame fudge. Some varieties are plain and others add things like pistachios, almonds and chocolate. I get mine at a Middle Eastern grocery store but some chain supermarkets have it. Check near the tahini.
Molly: Blink twice if you were forced by an editor to include a chocolate chip cookie recipe in your book. Otherwise I'm not sure why you had to include chips in your already delicious-sounding combo recipe against your will.

My pistachios turned into paste when I blitzed them! Cookies still turned out amazing but what can I do to prevent the pistachio paste problem?
Did you pulse them to blitz them or just turn it on and go to town? Nuts with usually become paste because the oils in them gets warmed up and leeches out, so pulse pulverizing them helps to avoid that problem.
You blitzed them for too long and made pistachio butter. Just pulse in the food processor a few times until they’re finely chopped
Use "pulse" a few times to get your bits for the tops of the cookies and then turn it to high. When you're using a food processor, you need to stand there and watch it.
Nut flour is not fine like regular flour, so to keep on processing with that as a goal is going to give you nut butter. Go until you have mostly fine bits. If you see that the bottom half of the processor is changing texture and getting oily, you need to stop.
These aren't fine french baking like macaron that require a very fine nut flour- they're just regular cookies. You don't need uniform pistachios.

I know I'm a year too late but please someone help me. I've made these a few times and they look and taste amazing except for one thing: the halva on top starts to brown/burn before the cookies are done, so I never get the pretty white pool :(( Anyone have any ideas on how to fix this?

Quite a few of my extended family don’t like chocolate and others have a nut allergy so I will probs make 1 batch just as you shown, 1 batch without nuts, 1 batch without choc 😂

Chocolate is proof that if you add enough sugar and dairy to something bitter, it'll taste amazing. cf. coffee and tea.
Does anyone know if these cookies can be frozen so they last longer?
I think most cookies freeze just fine, but I'd be more inclined to freeze the dough instead. I doubled her recipe thinking that one recipe only made 5 cookies, but I actually got over 20 cookies from a double batch. I'd just make the recipe, split the dough into two balls and wrap in saran wrap and a ziplock and freeze it until needed.
How long can I freeze the dough for?
Airtight products can be frozen for a year. If you're doing saran wrap and then a ziplock, I'd guess 6 months max but probably better to use by three months.

For non American (from Sweden) what is halva? I know I can google it myself, but maybe it’s good explain the unfamiliar ingredients for the people.
I'm American and had never heard of it. Apparently, it's similar to fudge and is made of sweetened sesame paste.
I don't trust any human that doesn't like chocolate. And I don't mean that I don't trust their cooking. I mean I don't trust them on a deep human level.
This reminds me of my mother. She’s always hated chocolate. We were once approached by traveling chocolate bar salesmen who told us that their chocolate would make her live forever if she rubbed it on her skin. I still rub chocolate bars on her skin to this day.

Science says some people dislike the taste of chocolate because many brands contain high levels of butyric acid, a byproduct of cooking milk. Butyric acid is also found in parmesan cheese and *vomit*. Some people's genetics make them more sensitive to the taste. Apparently Belgian and French chocolate has less of it and is more tolerable by those that otherwise don't like it.
She brings chocolate to the level of a vegan not wanting to try a meat dish.

Molly - science says you may be extra sensitive to the butyric acid found in lots of chocolate. Butyric acid is found in parmesan cheese and *vomit*, which might align with your 'butt' description. Apparently French and Belgian chocolates have lower levels, with American chocolates having the most. Maybe try some other brands.

I feel you, Molly! I, too, am not fond of chocolate, and when I tell people they absolutely LOSE THEIR MINDS. It's also a bummer because I am always getting gifted chocolate and end up just passing it on to my wife. The small silver lining is the calories I save when dessert menus contain nothing that appeals to me.
