INGREDIENTS:
230g (2 sticks) unsalted butter
100g (1/2 cup) light brown sugar
100g (1/2 cup) granulated white sugar
30g (1 1/2 Tbsp) corn syrup
1 large egg yolk
10g (2 tsp) vanilla extract
30g (2 Tbsp) milk
270g (2 cups) all-purpose flour
10g (2 tsp) salt
8g (1/2 Tbsp) baking soda
165g (6 oz) chopped chocolate (70% cacao) plus extra for topping
100g (1 cup) chopped toasted walnuts (sub macadamia nuts)
Flaky salt, for sprinkling on top
INSTRUCTIONS:
1. In a small saucepan over very low heat, melt the butter, being careful not to make it too hot.
2. In the bowl of a stand mixer, combine the light brown sugar, white sugar, and corn syrup. Use the paddle attachment and mix on medium speed. Gradually stream in the melted butter and mix for about 3-4 minutes until well combined.
3. Add the egg yolk, vanilla extract, and milk to the mixture. Mix on low speed for 30-45 seconds until everything is combined.
4. Into the mixer bowl with the wet ingredients, measure in the flour, salt, and baking soda.
5. Mix on low speed until just combined, about 30 seconds, being careful not to overmix to avoid gluten formation.
6. Add the chopped chocolate and chopped toasted walnuts to the dough. Mix on low until just incorporated (about 30 seconds)
7. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper. (QUICK TIP: I like these parchment sheets. They lie flat on the baking sheet and don’t require any measuring)
8. Scoop out chunks of cookie dough, slightly smaller than a golf ball, and place them about 2 inches apart on the prepared baking sheet. The dough will spread during baking, so no need to shape them perfectly.
9. Place 1-2 chunks of chocolate on top of each cookie dough and sprinkle a pinch of flaky salt on top.
10. Bake the cookies in the preheated oven for 14-16 minutes until they are lightly golden around the edges and set in the center.
11. After baking, allow the cookies to sit on the baking sheet for 4-5 minutes for carryover cooking.
12. Transfer the cookies to a wire rack to cool completely and set their crisp.

I vastly prefer crunchy cookies over chewy, so this recipe is right up my alley. Growing up, whenever my grandma made big batches of cookies, the kids always got the dark or crispy cookies first, while the other ones went on to get decorated. So my mom and I are much more fond of those and actively avoid any super soft, pale cookie. Whereas my best friend hates crunch, lolol

These cookies were the first thing I ever made with a stand mixer and they were great. The video doesn't really stress how important it is to leave them on the cooling rack for a while but they tasted much better after sitting. My family thought the chocolate was just a touch too bitter so I'll be trying 60% next time. The cookies taste even better on the second day after you refrigerate the leftover cookie dough! Totally different texture but still very good.

These are SO good. It’s ridiculous. I’ve made these twice this week. I cook em for 14 minutes or so to get more chewy crispy as opposed to crispy chewy if that makes any sense. Another excellent recipe!
Tried these cookies once... Then I tried them one more time just four days later and I think I will make them a third time within the coming week. So easy and so delicious. That milk dipping part is absolutely essential. Oh My God.

Looks tasty. I grew up with the Nestle's Toll house version, and my mom made them as bars--all the dough went into a higher-sided pan. When done we cut them like brownies.

Streaming warm, freshly melted butter into the sugars and whipping until fluffy and cooled gives you super chewy cookies with the caramelized tasty of crunchy cookies.
Took me 32 minutes. I cut the recipe in half, but skipped the milk since I still did a full egg yolk. Used pecans instead of walnuts and regular choc chips. Turned out crispy!
I finalyl got around to making these last night. These are AWESOME. I can eat just one they are so decadent and delicious.

Just made these following your recipe. The only thing I did differently was to brown the butter. By far the best chocolate chip cookie recipe I’ve used. This one is going in the book (my personal recipe book, torn pages and all, in the kitchen junk drawer with the tools and anything else I was too lazy to put away 😂) with all credit going to you, of course!
Looking forward to trying this. You say these are easier, though I've always had trouble getting cookies to come out thinner and crispier. Hopefully this will do it. These are my favorite style of cookie. Heck I would go a little bit further and say lace cookies are even better. But those are pretty hard to pull off and I've never been able to do it.

I made these and doubled the recipe since I was under the impression it made 6 cookies and I wanted 2 per person at least (there were 5 people). I ended up making like 30 or 36 cookies last night.
They're delicious, definitely gonna make it again since it was so quick and easy.

These are the type of cookies that my grandma makes and I always thought they were just a little better than the gooey kind!
Oh my chocolate chip cookie! I'll be honest thin and crispy aren't my usual go-to for a cookie...but woah! These were sooo good! I had just watched the video and then the next day made Italian meringue buttercream and thought what better way to use my yolks than to make these epic looking cookies. I tripled the recipe since I had 3 yolks and now we have cookies for days!!! I didn't have clear corn syrup on hand so I used golden and cut back a smidge on the brown sugar..still came out great. Due to the epic batch size I froze some dough to bake up later..hope it turns out just as great. Love your videos! Cheers from the north 🇨🇦
