If you are in a hurry and do not have the 2 hrs to make the broth, use box chicken broth, add the veg and seasoning to the pot, add a touch of liquid smoke for that bbq flavor, and bring to a boil. Then strain add your cornstarch slurry and continue. For those of you concerned with the sugar content, still use browning or make your own for the color, but u can sub tomatoe paste for the ketchup (this will also help with the thickening), and limit the honey per your taste. If you're concerned with the chicken seasoning make your own seasoning cubes and freeze them by blending your preferred herbs with a touch of sour orange and pouring it in freezer trays. Freeze them. Once frozen put the cubes in ziplpc bags and store in your freezer so you can drop it in a pot when you need them. Personally, I see nothing wrong with adhering to Chef's recipe. We don't eat like this every day so why not?

Absolutely delicious sauce, copied exactly and everyone couldn’t get enough of it. One even said it’s better than the local Caribbean food takeaway.. This is going to be a staple at every bbq of mine

I tweaked it a bit, the color of my gravy was not bad so I added less browning, I didn't use flour or pepper cuz my jerk seasoning was already hot & it turned out great. when cooking everyone has their preferences you gotta tweak it to ur liking, so don't come here and hate honestly what's the point ? @@chrystalbrown2851 or maybe people have different taste preferences and are more health conscious to try and prevent things like diabetes... just a thought good recipe but of course recipes are meant to be tweaked to your liking!
@@AquAcid as far as diabetes is concerned it's not some honey and ketchup that are gonna give it to you... Just avoid cakes and sweet stuff and sugary drinks. A little sugar in a dish you eat once in a while isn't gonna harm anyone who's not got diabetes yet of course. Moderation is the key. It's also a gravy so you won't eat much of it as it's a sort of condiment to flavour rice and chicken after. You need just a little bit.

Alesha Robinson you need ketchup! Brown sauce has a distinctive taste.
Sure use brown sauce... you can also use mayonnaise, makes no difference.

Chef you use too much sugar and sugar products in your food brethren! Ketchup, honey, Browning... All sugar! Start cook more consciously and healthy...
miztri agreed. What is chicken seasoning? Too much MSG . He has some decent techniques, but between these unnatural seasonings and the "twanging" Chef Ricardo's skills are questionable
Nine times out of 10 when someone is making jerk chicken they're not thinking about eating healthy per se. And more times than none everything is fresh if they want to use a dab of this and a dab of that let them. You don't have to fix your foods the same. Fix your foods how you want to and eat how you want to.
Unfortunately taste is in things like salt, fat and sugar. That's basically why restaurant food tastes better than home cooked as chefs aren't afraid of using those ingredients in their dishes like home cooks who are told that salt is bad and so on. If you wanna eat healthy there are dishes that are healthy intrinsically. A decadent dish tweaked to be "healthy" is pointless. You can eat a sugary thing once in a while. Won't kill you. You are not gonna eat like this everyday... moderation is the key.
@@tamikafrancis8241 You do know not all pre-made seasonings have MSG? In fact I haven't seen it in any of the ones I buy as they are usually without any preservatives or artificial ingredients nowadays. Maybe MSG is still used a lot in the US... in Europe not so much.
