fish sauce goes pretty well with tomato sauces actually. It's my "secret" ingredient when making homemade pizza sauce or bolognese. Italian Passata, fish sauce and some oregano. Sounds simple, but works pretty well on Pizza.
Tip I use at home ( I make lots of pizza) I use cornmeal under crust. Never sticks and add that crunch. This is so brilliant. I am excited to try this.

One of my suggestion for lemon grass is to use the flat side of a knife or the pestel to smash the stock part. It'll be easier to chop it to get smaller pieces.

Making this for tomorrows Friday Pizza Night! I'm making the nam prik pao today. I do pizza in a pre=heated cast-iron skillet to brown the bottom and a 450F oven to cook the ingredients and brown the top/melt the cheese.

Pizza at home : vegetarian version of this can be with vegies... need to try.. Even the very known curry baigan bharta looks new and very tasty when u prepare it.... there is some magic in you Pai. I wish u prepare many such indian dishes.
YEAH!!!!!!! Another person who uses the broiler-skillet method!!! I use this method exclusively when I make my 'neapolitan' pizzas at home because I don't have a WFO/WBO (wood-fired oven/wood-burning oven). Fyi, I actually use a well-seasoned circular pizza pan on top of an inverted baking tray or sheet under the broiler........ this makes spinning the pizza VERY simple, using two tongs. My broiler is actually under my oven (it's an old 70's model).... all natural-gas, no electronic components. I also don't use a "skillet" to cook the bottom........ i actually use a large 12" pre-heated grill pan. But before I can place the pizza on top of the grill pan, I actually place the pizza pan directly on a medium flame on my stove-top and strategically spin and maneuver the whole thing to evenly crisp up the bottom of the pizza......... this will ensure that the pizza won't rip or tear as I try to get it off the pizza pan and ONTO the grill pan to finish cooking. I find that this way, I get the perfect amount and balance of char to non-charred crust, and evenly, throughout the underside of the pizza.
That pizza is looking great and I love pizza, but not all that crazy about most of the pizzas most companies here make them. I may try making one like that and see how it comes out.

I've had some great success so far, so thanks again for this. One question, what exact pan are you using? I bought several different pans for making the pizza, and all the ones I've tried warp pretty badly during the 2 minutes of broiling. In your video, you pan seemed to have minimal warping if any, what did you use?
Taken me years to get pizza right in house. I have a baking stone in my oven now. It really is all about the dough. And yes you do have to use broil on the top for a bit. It's really to bad that bake/broil combination isn't something built into household ovens. It is dumb that you cannot turn both on at once. Short of building your own brick bread oven outdoors your going to have to suffer the standard kitchen oven.
Looks delicious! If I can offer one piece of advice and that would be using one of those wheel cutters like what they use commercially. They make the cutting of the pizza breeze and the topping will stay intact
I just tried making this and the pizza sauce kind of came out tasting like regular pizza sauce. I had to add ALOT of lime juice to get any sour notes. I’m sure it was something I did wrong. Will have to try it again after it takes me another few weeks to source the ingredients lol
