  • Mexican Burrito Bowl
    Ingredients:
    Grilled Chicken
    Boneless chicken breast, 1, cleaned and diced
    Cumin powder, 2 tsp
    Coriander powder, 2 tsp
    Red chilli powder, 1 tsp
    Ground black pepper, 1 tsp
    Ginger-garlic paste 2 tsp
    Salt as per taste
    Grilled Vegetables
    Colored bell peppers and onions, sliced
    Salt as per taste
    Beans
    Pinto beans, 1 cup
    Onion, 1 small, chopped
    Ginger-garlic paste, 2 tsp
    Tomato, 1 1/2, chopped
    Red chilli powder, 1 tsp
    Chicken broth- 2 1/2 cups
    Salt as per taste
    Cilantro Rice
    Cooked rice, 2 cups
    Chopped cilantro
    Crushed black pepper, 1 tsp
    Lime juice, as per taste
    Salt, as per taste
    Guacamole
    Avocado, 2 smashed
    Lime juice, as per taste
    Salt, as per taste
    Chopped cilantro
    Mango Salsa
    Mango, 1 diced into small pieces
    Onion, 2 tbsp, chopped
    Red bell pepper, 3 tbsp, chopped
    Cilantro, chopped
    Salt as per taste
    Lime juice as per taste
    Other
    Oil
    Sour cream
    Shredded Tex-Mex cheese
    Tabasco Sauce
    Chipotle Sauce
    Hot corn chips, optional
    Instructions:
    Grilled Chicken
    Cut the chicken into small pieces
    Marinate with the spices and little oil
    Keep marinated for 2 hrs
    Grill the chicken pieces in either table top grill, or stove top grill/pan
    Grilled Vegetables
    Marinate the veggies with salt and oil and grill
    Beans
    Soak the beans overnight
    Put oil in a pressure cooker
    Add onions, sauté till translucent
    Add ginger-garlic paste, and saute
    Add tomatoes, and sauté
    Add the remaining spices and mix nicely
    Add soaked beans and cook for few minutes
    Add chicken broth
    If needed add little water and pressure cook for 15 mins
    Once cooked, mash the beans and bring to a thickening consistency
    Cilantro Rice
    Heat oil in a pan
    Add cooked rice, lime juice, cilantro, salt and crushed black pepper
    Give it a nice mix
    Guacamole
    Add all the ingredients of guacamole together and give a nice mix. Optionally, thinly chopped green chillies can be added for extra spice level.
    Mango Salsa
    Add all the ingredients of mango salsa and give it a mix. Optionally, thinly chopped green chillies can be added for extra spice level.
    Assembly
    Take a bowl
    Add in the following order:
    Cilantro Rice
    Beans
    Chicken
    Veggies
    Guacamole
    Sour Cram
    Mango Salsa
    Shredded Cheese
    Tabasco Sauce
    Chipotle Sauce
    Optionally add, hot corn chips on the side
