Another lovely recipe Chef. Will try this weekend. We love dry rub for all meat and always let it marinate for two hours or overnight. Would be good with a side dish of coconut rice with a cucumber and yoghurt dressing. Where did you get those white small measuring bowls; love those? Thank you,
Chef, i make a similar dish but with a twist. I fry diced onions, finely chopped chilis and diced bell peppers first. In a bowl, I mix the fried onions and bell peppers with a cup of basmati rice and about a tablespoon of hot sauce (I like Nando’s) and a teaspoon of either turmeric or saffron. I pour this mixture onto the bottom of a casserole dish and place my chicken thighs with the rub on top of the rice mixture. I add a 1 1/2 cups of water to the rice being careful not to let it touch the chicken. I then cook this at 180 degrees C for an hour and 15 minutes uncovered. Truly wonderful! I saw roast on my oven; however, when I roast my expensive Lamb Foreshank, I was highly disappointed, they ALL Burn dry, So, I bake mine now. I normally those bake by Chicken Drumstick in the wintertime.
Why are all the comments like "looks yummy" and no comments from those that actually made this chicken? I usually leave comments after actually making the recipe.

What type of salt are you using?
I use Kosher salt in my cooking, its grainier and easy to control .
Kindly use white or clear gloves. Black don't look well on food.
