I had no idea how to roll sushi. I used this video to teach me and I am now making gorgeous sushi rolls. I think the video did its job. So I want to say "thank you" for making this video! : ) I think it would be nice if we all could just lighten up a bit and not take things so seriously. It is just a sushi roll.
You can roll sushi with a dish towel...or just plain plastic wrap, and they come out significantly tighter than the bamboo. Bamboo tends to put a sharp angle sometimes, rather than nice and round. AND you can't see what's happening. The bamboo tends to have the filling fall out of the ends and they are sloppy. With a towel...you can make the tightest, easy to cut, rolls. Also, this lady did a miserable job, but it gets the point across to wh*te people, who think its some crazy process involving raw fish. Sushi IS NOT raw fish. You can use it...but that's Sashimi. Sushi is rice, meat, and vegetables...just like nearly ALL Asian dishes. People hear "sushi" and think "ew...GROSS"...but those same people go to a chinese buffet and eat everything. It's EXACTLY the same. Like the difference between a taco and a burrito...it's the same $hit.
How to make Sushi: 1 cup = 3-4 Rolls 2 cup = 6-8 Rolls Place 1 or 2 cups of Sushi Rice or Medium Grain Rice in a bowl. Wash it with water in a swirl formation, continue for about 2-3 times until water is finally clear. (Make sure to drain them in each time.) Drain the water and refill the water, let rice and water sit for 30 minutes. Get a pot, drain the water from rice and add the rice in to the pot, then add 1 1/4 cups or 2 1/4 cups of water into the pot (Depending on the cups of rice you wanted.) Turn on high heat, let the water boil. After the water boils, let the rice cook in medium heat for 5 minutes. (Make sure the cover to the pot is halfway open to avoid the water rising.) Then let it cook on low heat for 15 minutes. After that, turn off the heat and let the rice cool down for 15 minutes. Meanwhile, lets make our special rice vinegar mixture! Add in 1/4 cup of rice vinegar into a bowl (1/4 cup for 2 cups of rice, 1/8 cup for 1 cup of rice.) Then add 1/2 tsp of maple syrup or Blue Agave Syrup. Add 1/2 tsp of sea salt or pink hamilyan salt. Then mix it all together, make sure its well mixed! (Again, if you cooked 1 cup of rice use half of the measurements from the recipe.) Take rice out on a bowl, pour the rice vinegar mixture and mix them together with a large wooden spoon. Once mixed well, cover with damp towel to avoid it from drying up so hardly. You can cut anything you want as the filling. So what I did is I cutted half an avacado as a start, then i cutted my cucumber, and a small portion of raw salmon. Lastly, lets make our spicy sushi mayonnaise sauce! If you dont like spicy, dont bother making this sauce. Add in 2 Tablespoons of hot sauce of any kind of brand, 2 Tablespoons of Mayonnaise, and 1 Teaspoon of Sesame Oil. Mix it up until its a peachy/yellow color! Place a rectangular seaweed on your sushi mat, add in the amount of rice on top of the sushi then flip it over. Add your fillings and the spicy sauce. Roll it up, cut it, and enjoy it!! This took me 15 minutes to write so I hope you understand. And It’s 3 am for me lol. Tip: when you add rice to the top surface of the seaweed, make sure to wet your fingers so it wont be too sticky. Another tip: before cutting it, place plastic wrap on the top of your sushi, moisturize your sharp knife, then carefully cut it so it wont fall apart.

There is a very exact tradition of spreading the rice on the Nori, but most sushi bars have "lost the way". Sushi masters have studied for years to learn the proper technique. An example of the proper way is to lay the rice on the Nori in only 6 movements It is said that sushi masters can place the rice on the Nori and have all the rice grains laying the same direction. The idea is to spread a tennisball size amount of sushi rice on the Nori WITHOUT pressing enough to squish the rice.

What if my rice is too "wet". I used a simmered rice vineger, sugar/salt and oil mixture. Its at room temperature right now and it falls apart a little, its not firming up, should I leave it at room temp or try cooling it in the fridge or what?
you should use about 70% less rice, you should be able to see the nori through it... also, you should wet the knife, and only use a really sharp knife...
