Sushi chef of 23 years here. I approve of this tutorial. Well done. Only thing I would say is to use the 2 finger and thumb cutting style all the way through, including the first cut.
When training chefs at the restaurant I completely agree! I hesitated to teach that technique at all in this video because if someone isn't mindful of their finger placement, then they could seriously cut themselves. Thanks for the vote of confidence!

I spent about 6 - 8 hours yesterday researching videos, info, ingredients and varying methods on how to make Sushi Rolls. This is best video I came across. Your description of what you are doing, how and why are fantastic. I like your attention to detail leading up to a final product of quality.
This is the best video of making California roll: basic and authentic way. His instruction is exactly I learned from a Japanese Sushi chef years ago. Thank you.

I am from Romania and one thing that i missed the most about USA was sushi rolls. Thanks to your videos i don't have to miss this anymore because i can make them myself. Now i only miss about 999 other things :D
Well Bryan, I finally did it. I made my first California roll thanks to your great video tutorials! I really screwed up the sushi rice the first time around by adding WAY too much rice wine vinegar (1 cup of rice + 1/4 cup of rice wine vinegar -- when I made this massive mistake, I'm sure that Master Chef Jiro felt a great disturbance in the force). I threw the rice away and started again: 1 cup of rice, then cooked it properly in a steamer, and then 1 fluid ounce (2 tbsp) of vinegar. WAY better! I went pretty thick on my cucumber slices so it was pretty difficult to seal the roll up completely, but hey -- it stayed together and was really quite tasty!! Thanks man! I'm going to buy better sushi grade rice next time. The brand I bought came with loads of rice grains that were broken and smashed right out of the bag. :( Hit me back and keep up the great work!
Oh yes, please feel free to give me any tips you have, thanks. The rice I bought was 'Sukina U.S. No.1 Extra Fancy Sushi Rice Premium Grade'. I was dismayed to realize that out of the bag, a lot of the rice grains were broken before I even touched them. I suppose they were milled improperly or were perhaps handled too roughly in transport? It was SUPER sticky right out of the steamer due to all that free starch...
@@jasonblair1114 , sushi rice is *supposed to be sticky*.. it's sushi rice, after all! Short-grain rice is used to make sushi, and short-grain rice is a different product from long-grain rice! :-)

This is a really great video with a lot of helpful tips. In particular the placement of items (meat middle, cucumber far side, avacado inside) I was putting avacado on the far side and it kept squishing out and not sticking properly. Also how to roll and cut; I saw one video that said it should only be a single slice but that wasn't working for me. The sawing motion is better. Thank you again!

California rolls and sushi are one of my favorite things in the entire world to eat, this is the best video I have seen so far on how to do it. I am now so much more motivated to try this at home! I'm so tired of wasting money buying it at the store or a resteraunt when i KNOW it is so much cheaper to do it yourself! Thank you so much my guy!
I slightly seasoned the rice, and I always keep a bowl of water with maybe a teaspoon or two of vinegar so you could dip your fingers and it does not stick as you roll it or pack down the rice. Great video!
Thanks for the video! I am waiting for my beginner's sushi kit to arrive from Amazon so I can get started right away, but with this video, I have a better idea of what to do when I finally get it. Woo-Hoo!

Thanks for the great video! Your beginning picture shows the imitation crab not in one big chunk but little pieces. Sometimes the California rolls in sushi restaurants are made with a crab salad-ish filling. Can you explain more please on how to do this? Thanks
Hey, thanks Eric! Yes, imitation crab salad is definitely a popular method for making a California Roll. Luckily it's also really easy to do! You simply shred the imitation crab meat (or buy it pre-shredded) and mix it with real mayonnaise to taste. Here's a link to the article on my website: secretsofsushi.com/california-roll.html On that page I have a simple breakdown of how I make imitation crab salad for Cali Rolls. Enjoy!

You did a great job showing us how to roll sushi. I grew up in Asia and since returning back to the states, I've found that long grain rice does not stick as well as medium grain rice. I prefer to season the rice after it is cooked, but some people add sake and kombu to the rice while it's cooking.
