- How to smoke kingfish has been a question I have been asked many times. With the grey tone of the King mackerel flesh, it turns off a lot of eaters. With special care and use of ingredients you can turn this usually scoffed at fish into something special. Today we take kingfish balls or nuggets and add smoke to make them one heck of a snack or meal. King Mackerel smokes real well and tastes delicious!

Ingredients:
2 Lbs of King Mackerel Balls/Nuggets
Honey mustard or whatever mustard flavor you prefer.
Spices - We used lemon pepper and slap ya mama
1. Coat nuggets with the mustard thin enough to hold rub
2. Sprinkle on rub of your choice
Smoke at 250F for 1 hour - Until internal temp is 170F -180F
Mix butter or margarine with granulated garlic and melt. Pour over smoked fish.
EAT IT!

Thanks for coming by! Yeah Kingfish or King Mackerel as they refer to it is abundant on the Texas coast in the summer. A lot of people do not eat it because of the bloodline in it. If you cut out the bloodline the flesh is dang good. Happy Easter to you as well! Hope y’all are having a beautiful day like we are. Mid 70s and ☀️

This is the only recipe I have seen that didn’t brine the fish first. I think yours turned out looking awesome. Do you ever bribe before smoking?
I do with salmon sometimes but these turned out great as they normally do. I might do the brine method on a bigger slab but these bites I think would take on too much of the brine taste and I just love the smoky flavors.

jack skelly hopefully you aren’t in the path of this hurricane coming in just east of us. Give it a try. They are great. I took some of the leftovers and shredded them with some mayo and made a kingfish sandwich for lunch!
