Love this recipe did it last year and I am going to do it again this year just got me in 30 pound king fish, and a 15 pound king fish. Thank you so much for showing me this.
Last Saturday my son surprised me with a 60th b-day half day charter off port everglades. We slayed the mahi and got 3 kings as well, Anyhoo, followed your basic recipe and blew the crowd away. Kept it chunky just like you did. Thx.
Looks absolutely delicious. My mouth was watering just thinking how good that dip must have tasted. I am going to have to try making that but will have to catch a KF first.
Four thumbs up I am watching these videos I’ve been watching these videos I just haven’t commented on them I just gave you a thumbs up so I’m fixing that now keep up the great videos you know
Thanks for the video! Picked up a smoker at a yard sale in Sugarloaf and had a bunch of mahi from neighbor's freezers after Irma (at their request of course before they thawed). Hopefully great fish dip tonight!
Great video!!! That's a nice smoking unit you've got!! I'm looking forward to smoking some fish and lobster this year!! Leanne and I are looking forward to going out tomorrow hope we have as much luck as you did in your last video!!! Take care Steve and tight lines!!!
I caught a nice smoke today and am making this dip tomorrow. I see you had a lemon in the lineup, but I didn’t see you squeeze any in. Do you recommend squeezing some in? Also, Does Publix or Winn Dixie carry the Everglades Seasoning?
22:35, the exact expression my son and I had tasting his kingfish dip, suff is like crack! I miss FL, not sure I miss Winn-Dixie, I guess I'm partial to Publix being it was my first job :) So got any friends to share all that dip with?
'Kingfish' where I'm from look completely different to that, what you call a Kingfish is a King Mackerel right? (I really don't know) The Kingfish where I'm from are called Yellowtail Kingfish, they're a whole lot uglier and less mean looking then your Kingfish, but I'm pretty sure they fight a lot harder. They're a kind of Amberjack so you can compare them to the Amberjack that you catch.
Kayak Fishing SoCal Oh so you guys have them as well? I didn't know that. It seems that America and Australia share A LOT of species of fish, but almost all of the time they have different names. It really gets confusing
Yea, Like Kayak Fishing SoCal said, they have them on the Pacific side. Much better eating than our Amberjack. I think somebody dropped the pages of the fish names on the way over to Australia and just covered it up. Same species just names scrambled. I do see the fish that Rodney Harris catches and there are some totally different species that I haven't seen before. He is on the west coast of Australia.
Looks good. We toss them back unless they got that halco 190 max all through the gills or something. Anything you need to brine and smoke and mix with other stuff is just along for the ride. They are ok fresh but I don't know something about cleaning them in 100 degree heat at the ramp and seeing that green tint meat. Next one that jumps on our mahi baits that we can't release will goto a dip and the rest to the dog.
hello man, whats up? first of all i love your videos, they have inspired me to fish using different styles and baits. now i have an issue with something and i would apretiate a suggestion, a video or even an advice about it... recently i got a 3/8 in mesh cast net for catching bait... sadly it got caugth on a rock at the bottom and now it have 3 small holes on it... and i cant afford another... you are a veteran fisherman and you use a castnet frecuently so i ask you... how do you repair your cast net when it gets teared? there is any really visual video or something where i can learn how to repair it? please, im new to cast nets and actually im very sad because i cant find any good video explaining how to care/repair them
Good instructional video, Steve. I now know what to do if I catch any Kings. How do you know when they've smoked enough? X minutes per pound, internal temperature (use a probe?)? Happy New Years!
140 degrees for 30 minutes. I just keep an eye on the filets as they aren't too thick. For fish dip, you can be a bit too dry and still be okay so not such a huge deal.
Why leave the best smoked fish outer (NOT THE SKIN) out of the smoked fish dip? After all, it is smoked fish dip....! The full, rich flavor is in the golden outer layer.... Where I'm from the golden smoked outer layer is definitely added to the fish dip... Is what gives the rich, smoky flavor to the dip.....
I couldn't hold back either. The first filet went down just as soon as I got it off the smoker. It's kind of like opening a bag of jerky. You can't eat just one.
Yup. What David said. Everglades is a Florida spice specialty. Not sure how far around the country it is sold. Smoking works better with the more oily fish. Less chance of drying out plus the smoke covers the fishy taste often found with oily fish.
I bet you had a lot of history with smoking in CALI!!!!! HOOKEM IN THE MOUTH. WITH THE CALI PEACE PIPE! Wait Is that the smoking you was talking about! oh well, Way to get your SMOKE ON BRO!
In The Keys when we catch a smoker kingfish we make enough for friends and neighbors with this recipe. And when your neighbor catches one you get some fresh dip too. It’s a great tradition that brings people together. But every neighborhood has a guy who just gets it from a restaurant. Sounds like you’re that guy
Your dry brine is the best I have ever tried. It is amazing how well it works at pulling out the moisture and preparing the meat for smoking. Thanks!
Love this recipe did it last year and I am going to do it again this year just got me in 30 pound king fish, and a 15 pound king fish. Thank you so much for showing me this.
I watched a few different fish dip videos and stopped at yours 😂 this is the one I’m doing 👍🏽 thanks for the time and effort of sharing this with us!
My grandson and my neighbor made this and it is over the top WOW!
Last Saturday my son surprised me with a 60th b-day half day charter off port everglades. We slayed the mahi and got 3 kings as well, Anyhoo, followed your basic recipe and blew the crowd away. Kept it chunky just like you did. Thx.
james rudman nice man,
Expertise! Generously shared.
Great video. My favorite part is the rods and reels behind the couch! My dude!
Looks absolutely delicious. My mouth was watering just thinking how good that dip must have tasted. I am going to have to try making that but will have to catch a KF first.
It's a lot of work, but it does taste great. Everybody seems to like it. Amberjack is also used quite a bit down here.
Four thumbs up I am watching these videos I’ve been watching these videos I just haven’t commented on them I just gave you a thumbs up so I’m fixing that now keep up the great videos you know
No better way to eat kingfish, looks good! Happy new year Brotha!

Thanks for the video! Picked up a smoker at a yard sale in Sugarloaf and had a bunch of mahi from neighbor's freezers after Irma (at their request of course before they thawed). Hopefully great fish dip tonight!
Thanks for for the cooking video Steve. I tried it on the king fish I caught when I was in Islamorada 3 weeks ago and everyone at home loves your
Everyone at home loves your recipe.
Glad it came out good. It is really addicting. I always warn people that it is very rich so don't over do it.

Yea, winter is a great time for some fish smoking. Makes things a lot more rich and hearty. Good luck out there.
Thanks Steve!!!!
Smoked Fish Dip for the win! 👏 Great video Steve!
It lasted about four hours. LOL. Dolled it out to friends. Thanks.
YOOOO this is whats up!
It's that time of the year to be smoking some fish.
wow that's a five star recipe happy new year Steve
Thanks Ruben. It came out tasting five stars. It was gone by the next morning. Friends all took their share. LOL.
I caught a nice smoke today and am making this dip tomorrow. I see you had a lemon in the lineup, but I didn’t see you squeeze any in. Do you recommend squeezing some in? Also, Does Publix or Winn Dixie carry the Everglades Seasoning?

Making it look like a great thing to do.
Definitely recommended.
Save me a plate Steve. Kingfish dip sounds nice.
Perfect New Years party dip. It was all dolled out the next morning. I finished up around 5am and it was all gone by 10.

Retz in California we call your king fish a yellowtail.

nice recipe man. good tutorial. I use Spanish mackerel. love it when I get into a school of those.
Those would be great as well. No need to make dip out of those.
Looks and sounds delicious. Happy New Year!
Thanks quinnsd13. It was. Everybody loved it. Happy 2017 to you.
Nice Vid Looks Delicious Thanks for sharing, Graham.
Excellent video!
Glad you liked it.

If you’d ever had some great Florida Keys kingfish do you wouldn’t have such a negative opinion. You are seriously missing out

Hello Steve, good stuff there bro👍
Thanks Diego. Everybody loved it. It was gone by 10am.
looks awesome man! i live in louisiana so I may try this with Speckled trout.
That would work great for the trout.
New sub, great channel, the effort is appreciated! Love your yak setup as well. I can tell that you're a reel guy by the sharpness of your knives.
Welcome to the channel james. Yea, it's an old school Craftsman knife I found at a swap meet. Must be old as I didn't even know they made knives.
Making some right now! My first time!! Mmm
It's one of those things that's a pain in the ass to do, but tastes so good.
I get you on that. i didn't get finished until 5am. The filming part adds a lot of time but still its a long process.
Happy new year! Nice dip, would love to see smoked salmon recipe, did you hot or cold smoked the salmon in CA?
Med-low as I used the same charcoal based smoker. Did a lot of different recipes from candied to spiced. Salmon is a great fish for smoking.
I just got a Gopro 3 Silver, can you do a video on how to edit and use. I know that is a lot to ask,but I am sure people will watch.
Mmm looks great!
Tastes great but definitely not health food. LOL.
Great recipe
You missed it. I'll probably do another batch of smoked fish. Different recipe though.
love the videos
Appreciate it rafael.
Have you ever made the dip using smoked tuna?
Have you mixed that dip in a salad like dressing? Try it. It's so good.
That looks great keep it up!
Thanks RedaLife. Appreciate you checking it out.
Had to go get some Dip After Watching this. Im going to be posting Some Fishing in Tampa Videos Soon.
My favorite fish!
Do you guys get the Cero mackerals down there as well?
yes.
FIRST, the One and Only. The King!!!!!!;-):B-)B-)B-)LOL
Took about five tries though. You have some serious competitors for the throne.
wow that looks good
Everybody loved it. It was gone before 10am that next morning. Guess it is good for breakfast as well.
Did you use the lemon? If so how much?

Happy New Year!!
Happy New Year Tommy.
It sucks when I watch a video like this and then go eat a grill cheese sandwich
dude, i want, so hard, to take a chunk of that fillet! It looks delicious
I couldn't hold back either. The first filet went down just as soon as I got it off the smoker. It's kind of like opening a bag of jerky. You can't eat just one.
I like making fried kingfish nuggets!
I've heard those are good. I was chomping on the plain smoked filets as well.
1- what are Everglades?
2- will this recipe work with other fish?
William Martin everglades is a type of spice it works with almost everything and this dish should work with other fish
Yup. What David said. Everglades is a Florida spice specialty. Not sure how far around the country it is sold. Smoking works better with the more oily fish. Less chance of drying out plus the smoke covers the fishy taste often found with oily fish.
Thanks
maple syrup when u smoke it yummy
Damn. Now I'm hungry.
In Key West, you can buy Kingfish dip at the gas stations. LOL.
I'm late crap ... nice vid
LOL. I was smoking shark fillets while watching this vid. Problem was it was hard to roll them up in those little paper thingies. :)
Just make sure you puff from the right side. It can get dangerous if you don't.
You are such a nice generous guy, always keeping some for the people around you.
Wish you a great, happy and peaceful life bro.
Thanks. Appreciate the compliment Yasser.
Steve, put fish in triple publix bag w dry ingredients. Shake. no dishes to wash...
Garden hose blasts dishes fast. Outside cooking benefit.
What temperature did you have
What temp did you run the smoker at
You can really cook!
My Mom is proud of me. LOL. Thanks Gulp.
Nice she should be! Np
Happy New Year Steve, Yummy., Please send me some via UPS I'm craving now!! LOL.
Happy New Year Coral. Looking forward to 2017.
Everglades=awesomeness
Yea, I finally got a bottle to try. I'll need to use it on some basic meats to test it out. Everybody raves about it.
We're really smokin it up now! xD
It's all legal down here in Key West. Kings, Amberjack, Mullet, you can smoke them all. LOL.
need a couple Jalapeños on top!!!
Yea, I went kind of wimpy on this version as I was going to be giving a lot of it away. I have created some hot ones that spicy people love.
u could sell that at a 5 star resurant
Thanks James. It was all doled out by 10am. It's a Key West treat that everybody is willing to take.
Looked so tasty u make so much good food. What's up with that
Very popular with people. Plus, a guys gotta eat.
I bet you had a lot of history with smoking in CALI!!!!! HOOKEM IN THE MOUTH. WITH THE CALI PEACE PIPE! Wait Is that the smoking you was talking about! oh well, Way to get your SMOKE ON BRO!

Totally legal. LOL.
"smoking......... fish"
Shhhh. Keep it on the down low. The vegans may be watching.
This is why I just buy it from the restaurants. The perks of Florida

It’s a great tradition that brings people together. But every neighborhood has a guy who just gets it from a restaurant. Sounds like you’re that guy
@@drdrew3 That might be the cringiest attempt at an own i've ever seen. Nobody cares about your tradition or your superiority complex old man.
HAPPY NEW YEAR! Steve, let me send you my address and you can send me some, ok?
LOL. Might need to brine it a bit longer for that.
