- In this video we head into Florida Bay and the Gulf of Mexico on the new Shallow Sport X3 bay boat. We catch a bunch of snapper and porgy in the morning and then get into a good bite of Spanish mackerel in the afternoon. Back at home Charlie shows us his favorite way to brine fish and get it ready for the smoker. The following day we smoke the fish on the Traeger and make some of the best fish dip I’ve ever had! Made fish dip with a king fish I caught and it sucked. Will try again with more attention to brining the fish before smoking
castmasters with the white feather does well with spanish. Behind the Hobiecat we troll 4 surgical tubing that I would make up with either a bigger mylar or clark spoon on the end. I make the rigs up using every color besides yellow. Yellow just attracts jacks too much. Biggest King we caught were 33 and 36 pound king fish, using clark and Pet Spoons. Some of our Spanish were over 5 pounds. Back in the 60's there were spanish schools as far as you could see on the ocean. But when they started netting them for fertilizer, the schools got smaller and smaller. True too with mahi until long liners started targeting them. Before DNR took over your fish catch, we used to fillet Spanish and put them in salt water to get the blood out then into a ziplock on ice. On the way back from the gulf stream I used to clean the mahi tuna and wahoo on the cockpit kneeling on my knees so no cleaning fish back at the marina. 4 hour boat ride home. DNR messed up cleaning fish when they were the freshest.
I would say, cool that stock with bagged ice. I’m sure your ice is filtered, but it certainly dilutes the aromatics. I’d love to danallen18 this recipe with chicken, fish or vegetable stock!

Hi Nick ! Add grated eggs, finely sliced pickled cucumber, onion or chives and mayonnaise. Season with salt and pepper to taste, knead the whole thing with a fork, but not too finely , I eat it with buttered bread. It is very important that the fish taken out of the brine are dry - otherwise, instead of smoking, they will simply boil. They should be wiped with a paper towel also inside. Regards :D

That was more of a spread than a dip. Still looked great though. But when it is that chunky you need a butter knife to get the "dip" on the cracker. I prefer the spread over the dip anyway. I know you don't like the heat but finely diced jalapeno or serrano peppers really livens things up. You could have them as a side for folks to sprinkle them on as they like. That was a fun video from start to finish!

Hey buddy so you and I have the same phobia about fish bones I got it from my dad LOL if I get a fish bone in my mouth I lose my appetite and there's no coming back. I was a chef in lighthouse point Deerfield Beach Boca Raton for years and went to the fisherman seafood restaurant in Fort Lauderdale and the chef knew I was coming for dinner so he prepared a special dinner for me and my guest when he said it was stuffed snapper so i told him about me and fish bones. So he says to me chef don't worry no bones i guarantee it i'm making the fish myself and then the first bite i got a big old bone stuck in the roof of my mouth he came out and said i will make you something different if you want i am so sorry i was so embarrassed but at the same thing i was pissed off 🤬funny thing was he told me he'd go to another restaurant and get me whatever i wanted to eat at that time of my life i was an executive chef over 5 restaurants, so he was embarrassed big time funny part about it was the meal didn't cost us nothing and there were six of us. So I am sympathy with you on fish bones.✌✌💪💖🚌🌻👍

Used to catch 1,000s of spanish trolling behind the hobiecat 16. We caught yellow tail, other snapper and spanish and took then into Schooners for lunch. They had been swimming only an hour earlier. Surprising everybody at our table said the fresh spanish taste the best. Spanish do not keep well in the icebox or freezer. Savannah boat show this weekend, it is a real joke compared to the Miami boat show.

Always great videos. thought you might like to try this recipe have used Cod, sea bass, yellow tail, especially mangrove snapper.
works best with electric frying pan, take your filets season them the way you like, in a pan i use butter and oil and cook you filets on both sides about a minute and half or two on each side, place your filets in the electric frying pan, usually i put two or three layers of filets all depends on thickness of filets. next place, black olives, green, olives, onions, capers cherry tomatoes and cover with your favorite shredded cheese and cover and turn dial to 350 degrees for 1/2 hour uncover and let liquid settle down and serve. serves about 6 to 8

Your friend CHARLIE seems pretty wasteful ? It would have been worth the extra effort to pull them bones out of the fish ! They would come out SUPER EASY AFTER THE FISH WAS SMOKED !!! I would have used the entire cream cheese block ( THE WHOLE THING ) Other than that, the fish dip looked totally awesome !!!

I am a newbie fishing the keys and usually in the spring how far out do you run to spots like this?

I rent a boat when I come down from the thumb of Michigan and usually I have a week to get her done and usually in the spring it's hard to get out on the ocean side as you know for a 24' boat so I have been trying to get as much info as I can for fishing the bay thanks for your time love the channel and I will see you soon!

Why don’t you guys brain and bleed or use ike jime method?
We bleed a good amount of fish but can’t tell a difference in the taste to be honest. Appearance is much better and it Probably helps with the longevity keeping the meat. I can’t tell a difference when we Ike jime them either

Does it depend on the fish or your choice to add water the the ice?
A saltwater brine in the fish box is usually best but A few things play a factor. Main thing if it’s rough or choppy (on any boat) and the fish box is in the bow they can get beat up a lot more in a brine from sliding around.
