I show you how to smoke fish. I am using a Char Broil Smoker. This is a Charbroil electric smoker. So I show you how to use a charbroil electric smoker to smoke kingfish and make some smoke fish dip. Oh man it's so good! If I had to recommend a catch and cook this would be the one!
I start this catch n cook video by making a brine for the kingfish. We will put the kingfish in the brine for 6-7 hours before smoking the fish. I make the brine 1 part sugar and 1 part salt.
Once the kingfish has been in the brine for a few hours we let the fish rest for an hour to let it get to room temperature. In the mean time I am preheating the electric smoker. The charbroil electric smoker has a preheat function that you should use to get the wood chips smoking. I am using apple wood chips for this catch n cook.
Once the charbroil electric smoker is smoking it's time to put the kingfish inside the electric smoker. This is how to use a electric smoker! We will smoke the kingfish for about 2 hours at 225 degrees. The internal temperature of the fish should reach 150F.
After 2 hours it's time to remove the smoked kingfish from the charbroil smoker. Now it's time to make some smoked fish dip. So after smoking fish I will show you how to make fish dip.
After I make the smoked kingfish fish dip I portion some of it out and take my bike and give the smoked fishdip to my neighbors!

I like the dry cure method for fish as well. I usually divide the fish up into gallon Ziploc bags and add the cure (salt & sugar mix) to each bag. Then I can stuff the bags wherever I want in the fridge and cleanup is a breeze (less rinsing).

Fish dip, sour cream ,smoked fish Dijon mustard thats it ,adjust ingredients to taste and texture
You shouldn't brine in metal containers,I was always told either crock or plastic

Just a little tip to make clean up easier. As some aluminum foil to the drip tray so that the fish fluids don’t stick to the drip tray. It’s a pain in the ass to clean. Also don’t fill the wood chips all the way, it takes longer to smoke. Just add a little through out your smoking process.

Another idea is to have a Traeger grill, or something similar. Smoking starts in about 5-7 minutes.

Mackerel (kingfish) in Australia is a lot whiter flesh fish regardless of size for some reason.
