How to Smoke Fish | Chuds BBQ

- Опубликовано: 2 авг 2024
- This week I stop into Calumet Fisheries in Chicago and get myself some smoked fish. Then I go fishing for catfish in Arkansas with Evan LeRoy, of LeRoy and Lewis. I smoke the brined catfish, along with salmon, in the Mini Chudbox with low heat to make sure it's extra smoky.

Digging the incorporation of your regular vids with the vlog style videos. It’s a nice change of pace.
I agree, totally cool
I agree, as well.
Me 3
5:28 “Stay away from my boots!” Gave me a good little giggle, thanks Chud
I've seen a bunch of his videos but NVR knew what it meant or was referring to
I wear Ariats the place Noah’s Ark landed after the Flood
Best episode yet. Love Calumet Fisheries! Their cold smoked shrimp are the best thing they got.
You are really upping your game with the production quality and storyline. Amazing job.
Super Nice change of format! Really enjoyed the travelling part.
Awesome video man! Never stop creating content!
Man, this was a fun watch! I realized I had a big smile on my face the entire time y'all were fishing. Made me happy for you, and also wish I was in the boat catching cats with y'all! Really glad you tackled tbis- it's such an underdone thing(here in the south anyway), but so delicious!
I’ve eaten my weight in calumet fisheries fried shrimp & smoked whitefish. Been going there since I was a wee lad and it’s just as good today as it was back then
Loving your growth my brother these videos are dope!!
Fabulosity. Beautiful place to fish and great videography.
The vlog style mixed in was super awesome.
Love the vid, love the style, love the crocs, love the CHUD.
Loved following you around in this video! Nice to let us out of the backyard once in a while 😂 also loved the royalty free mad scientist bbq b-roll music haha classic!
the little adventures are a big pluss in your vids.
Damn Brad, you hit a home run with this cook! Love smoking fish and now I’m wanting to give yours a try. Great video!
That catfish catching footage was amazing!
Looks good! Definitely gonna have to try this out.
best video yet. nothing like a day with the boys
Excellent video! Gotta smoke some fish!
Love the fish edition!
Wow you was right down the street from while I live. Good stuff
Catch, Clean & Smoke. Nice!
Love a good field trip🎣😎👍
Awesome Videos keep up the good work 👏
Yesssss Bradley, finally incorporating some fishing into your videos.
Fishing, and BBQing, Texas’ two favorite past times.
Editing and production quality was pretty awesome on this one.
I rarely eat fish, but this looks like a game changer. Thanks for sharing. Scott
Thanks for this. My father-in-law just gave us some salmon that he caught in Alaska. He asked me to smoke them and I’m going with your directions here. Can’t wait 🐟
The production value 👌
Great vid!
I’m gunna have to try this out!
Nicely done!
Looks amazing 😍
Fell in love with smoked tuna dip on a trip to Florida and have made it a couple of times since. Very addictive. Always looked at salmon steaks with a leery eye. Now I know what to do with them. Thanks for the vid, Brad!
man i feel the same way. i see those steaks at supermarkets and im like bro what just cook an actual fillet. im making this tho
Dude the length and content of this video was excellent! Showing the trip to both Chicago and Arkansas really tied the story together instead of just mentioning where you got the fish while cooking. Was that a fried catfish tail you crunched on in AR?
I have three trout that I caught last fall. I'm going to give this one a go. Thanks for the lesson brother.
This how I got in to smoking 45 years ago is with fish, I would smoke Tulip which is also known as whitefish and bullheads what a great childhood I lived. Great video well done nothing wrong with some river catfish.
Bro, this is awesome! Takes me back to my childhood in the North. If you really want the best smoked fish experience, try whitefish! Fresh water whitefish is absolutely out of this world.
Love Evan with the stash
Im visiting Chicago this week, I'm definitely going to swing into Calumet fisheries for some snacks!
That was pretty damned cool. Have never been a fan of fish - but I need to try this!
Every year, my dad went to the Calumet fishery for smoked chubbs and shrimp for Christmas Eve dinner. Been there a few times myself but I'd say I've been eating their fish for over 30 years and my dad still goes there to this day. BTW, you say Calumet very funny. :)
Killing it Chud 🍺🍺✌️
Love smoked catfish dip!
Smoke salmon and whitefish from Green Bay, Wisconsin caught through the ice, ab fab thee best!
Great place for fish
“Chud’s Unknown,” coming to Discovery Channel this Fall.
Expedition Chud!
Black Duck Revival was the name of outfitter and I have been following him for a while and by every account a super cool dude
Smoked Mullet is good as well. And super plentiful in Florida.
He so got taken fishing, i betcha. Must have been awesome
Great Video Chud! Calumet Is awesome! I am from the Chicago area and have visited it many times! You have inspired me to do a catch and cook! Maybe a the king of the river a "Flathead Catfish"! Try adding capers to your smoked fish dip! New Camera Coming in a week too! Time to get started! I wonder if I can smoke crappie???
Yes! Been waiting for this one. Looks so good, I can taste it. Fatty salmon IS the best.
Keep up the great work, professor Chud 👍
Just posted on JW's latest vid for you n him to do a collaboration. 🤞✌️
Fried fish tails are some of the best eating there is. So crispy 🤤
Try this recipe with eels....fantastic!
You should go back during duck season. Nothing better than flooded green timber in Arkansas!! Be another good video idea, smoked duck is delicious.
My hero!!
Didn’t realize you were in Austin..me too! And I do need a bigger smoker. I started bbqing in January this year on an old country pit (wrangler) offset. I’ve been able to make great stuff based on what I’ve learned from your channel and Jeremy Yoder’s. I have more ppl asking me for it, so I need more space lmao
Smoked a side of sockeye while I was off for two weeks... Was good but nothing like the lox wings my dad works bring home and grill. Was thinking a larger fish next time maybe and that salmon steak just convinced me. Looks amazing!
smoked fish that’s cold with a beer is the best!
THANKS
You need to book some time in Alaska, lived there for three years and still miss it! Suggest time in Homer as well as Seward, Resurrection Bay is da bomb. Deep sea fishing in the morning, fresh water in the afternoon.
YUMMY I'M DOING THISSSSS
That would make a great salmon dip.
Hoping the next brisket video is catch/clean/cook style.
Best smoked salmon. Use a bone remove filled. Brine in kosher salt and brown sugar brine. Pat it dry with paper towel a bit of brown sugar on top then smoke at 160 ish for 4 hrs with 3 pans of wood chips omg my mouth is watering
Brined over night
The best is what you caught. Tip of the hat.
oooh! I have that same salt box.. Alton Brown inspiration if I remember correctly.
Come to White river for trout or Beaver Lake for Striper or Bass. I got all the gear you need.
Really enjoyed this style of video. Maybe for the next video you can cook up a breakfast style video such as steak and eggs?
Hmmmm? Smoked ham? Smoked hard-boiled eggs? Bacon? Sausage? Sounds good. Now I want breakfast and it’s 4 o’clock pm. Maybe some flapjacks on the press too? Damn.
yoooo gotta try this.
“Stay away from my boots” LOL.
Awesome video! Love your content. Question: I'm a smoking beginner, and I've been learning a lot about dirty vs clean smoke. It seems like fire some things (this fish, sausage, etc...) that the dirty smoke is what you want. Why is that? Could you do s video sometime explaining why dirty smoke might work better for some things?
it almost made me want to try salmon
Sick edit! Shiner Bock!
"Stay away from my boot!" Had me rollin
Love your channel. Just subbed! Can you make a smoked country pâté video?
Wild catfish lucky dog!
Come up to Minnesota for some Ice fishing for Walleye
When the music kicked in I thought I had accidentally clicked on a Matt's Off Road Recovery video without noticing lol
Your "adventure footage" looked like it was shot by a professional. 👍
Now I want a big Ole bag of catfish fin chips! Cool video bro. 🤘
would be super cool to try with Sturgeon
Say it with me... Cal-you-met 😂 We grew up eating smoked smelt/trout from the fishery, took me back!
I was thinking the same thing. I remember going there for smoked chubs, those were my favorite. No smoked fish here in central Texas.
I had some awesome smoked buffalo fish there once.
Do you eat it cold ?
@@rubenponcejr3801 it’s smoked so it’s cooked, you can eat it hot or cold
@@MrBootre1989 how do you eat it? Do they serve it cold there?
SWEET
You can salmon fish in Chicago in the early fall. Have to come back up here
Come up to Washington for some salmon fishing. Puget Sound has a lot of good salmon up here
You should get up with Jeff and Hannah Barron in Lower Alabama. They noodle big ole catfish!!
This looks like the simplest video to do at home that's on this channel, nice. Also, is it recommended to let smoked fish cool in a fridge like you did, or did you do that to just replicate the restaurant you went to? I'm curious because I'm hoping to try this and eat as soon as the fish comes off the smoker when the juices are still kinda flowy.
Had the same question
Go to Colorado bend state park in Bend Texas when the white bass are spawning from lake Buchanan. You won't be sorry! My grandparents used to own it and ran a fishing camp for years! I promise you won't be sorry!
do you have a video for smoked fish dip?
Found that boot snake!
Question: How do you keep the smoke from becoming bitter on a cook of this style?
Do you think this would be good with any fish? I'm down off the Gulf in FL and mostly catch/eat snapper variety and grouper.
Nice recreation of "Deliverance" only without the squealing. LOL
DUDE! Huge fan of yours. Please tell me your thoughts on pellet smokers! 🙏🏼 I know it’s not as good as what you’re doing… but for us chumps! Haha. Thanks man!
This guy wants you to subscribe but doesn’t waste his time answering our questions. Chud the dud…
Since the salmon comes out of the smoker a little dry I would served the salmon with the Dipping sauce and let the Catfish sing on its it own since it a more delicate texture & flavor but that is just my opinion based on my own observation
I recognized the fish in the thumbnail (I from the south side of Chicago)
LOL "STAY OUTTA MY BOOTS"
I could smell this video
Man ..wonder how that would be done up like a tuna samich...broken down by fork..a little mayo..bread bacon....mmmmmmm boy..bucket list
What torch did you use to light your pit??
