So my fiancé did all the outdoor grilling and smoking, he sadly passed away in January and I’m now trying to learn how to use his smoker. This was very helpful, I’ll check out your other videos to see what else I can learn! Thanks for sharing!
This video made me much less scared of smoking meats, I'm planning on buying a offset smoker soon and I was very intimidated by keeping the fire steady but your video made it seem alot simpler and easier
Easy Buddy. I'm new to Off Set Smokers and just want to thank you with this video of how to manage Heat and Clean Smoke etc. The tip with warming a log on the top was priceless and makes perfect sense to me. Excellent Helpful Video 👍👍👍👍🏴🇬🇧
I actually just got a used char griller side by side gas grill with a smoker and a fire box today. This video explained a lot and had good tips that I think should make my first cook a success. I actually thought you wanted lots of white smoke but now I understand that’s not the case. Thanks mate.
Dude, I feel the same way! I’m the only person who knows how to smoke in my family or that appreciates the labor behind it all. They all think otherwise
Ive always had a foul taste and didn't know why. its cause of dirty smoke and this is really the only good vid I have found on how to set up coals to get proper smoke, and what proper smoke is. I thought you should see smoke just billowing out so my last attempt almost made everyone sick lol. thanks
Great instructional video. Fire management is part of the BBQing experience. I know that hardcore pellet grill owners get really defensive about it being real BBQ but, truthfully, real BBQ is about controlling the cooking conditions. Anyone can hit a button and come back hours later. A video on how to use a Weber 22” for smoking would be really appreciated.
@@LownSlowBasics my girlfriend doesn’t like smoke flavor. With your particular offset smoker, can it maintain 275F with just charcoal and no wood logs?
Great video! I wasted a ton on charcoal last weekend (first time and didn't know what I was doing). Wish I would have watched you first. I now feel ready to try again. Thank you!
Thanks for the video! I just bought my Chargriller, similar to yours and am learning day by day, and thanks to people kind enough to share their videos I am finally getting the hang of it
I've got the same grill. Love it, great value. A couple of points I picked up over the years - I don't spritz before adding fuel as it picks up more of the dirty smoke that goes on for a short time until splits catch. I grabbed a Reesibi 90W Electric Air Duster, I drop a small plate I made over the firebox vent into the chamber to prevent ash blowing in, this this thing RIPS. 30 seconds and everything in the firebox is lit & it'll blow out all the ash too - but, it is a bit messy.
Damn, that's a badass back porch. I wouldn't even care what the rest of my house looked like if I had that setup 😁❗ Oh!! Thanks for the vid man, using my offset for the 1st time this weekend - you helped out alot
Thank you so much for this video. My husband passed last year and I’ve been left to figure out this smoker grill. While my first attempt was good and juicy, I had it IN the smoker. It had a crust to it. Lol My mind is seriously blown about the meat going in the grill and not in the smoker box. 😂
Thanks. We've rented a place in cottage country and they have an offset smoker. I've used a Weber Grill, Kamado Joe and gas but never an offset. Thanks for the overview, well done !
This is the first grill smoker video I've seen differentiating clear smoke vs. white smoke. Do you utilize those same standards when grilling chicken, burgers, sausage, etc?
This is the nicest chargriller smoker I've seen. I started on a chargriller, but mine was POS with gaps all the way around, didn't have an inset door like yours, just top half barrel and bottom half so wasn't good for keeping heat in.
Thanks for making this excellent guide. My neighbor gave me an offset just like yours, so I’m looking to finally smoke something this weekend. I’ve wanted to try it for years.
Wonderful!!! Want to Buy a Smoker on My arrival back home and some dears due to lack of knowledge kept Me back but after Your video everything is so clear.. Thank You very much!
Nice simple video on a offset. I love the whole process of fire management. As long as you have plenty of split wood. Because swinging a axe after a couple of bourbons not recomended
I started on a big stick burner, then bought a offset and weber kettle. I purchases a rectec pellet grill, cooked ribs, pork butter, wings, chicken and prime rib. I gave it to a friend as I didn't enjoy the flavor and missed doing the cook management.
@@SkunkMonkey991 Agree 100% mate, I've got a Traeger and on balance have enjoyed it. The problem is everything tastes the same - you get different pellets but they don't change overall flavour. Some things (e.g. pork and lamb shoulder) I like on the Traeger. Cooked nice chicken wings but have to cook super hot and at risk of the auger pellets catching alight. Been thinking of an offset for a while and I like this channels videos to help me get started with cook management. The guy in the video does a really good job of explaining things.
My fiance actually just got me one of these grills with offset smoker for an early Father's Day present. Looks like a bit of work but I'm so excited to start churning out some BBQ
Your videos have been fantastic on informing me how to cook on grills and offset smokers. I have one coming in as i make this comment that i hope to use to make some bbq with my neighbor
Thanks for this video. I have been using a Weber with the snake method since I started smoking meats and just got myself a smoker with the offset. This was vert helpful and I think my brisket tomorrow will be much better thanks to you!
I just got my first smoker yesterday, been doing my smoking on a Weber kettle. It's basically the exact model in the video, the smoker I have. I made some food on it last night and I was having trouble keeping the temperature under 300-350. Watching this video has opened my eyes on how to go about it better, so I'm excited to try again, and excited to check out your other videos. Thank you so much! Nobody else was answering my questions the way you have!
just brought a smoker did the enitial burn off today learned the middle was the hot spot on my barrel smoker but i guess you can change it from middle to end to end depending on coal placement looking forward to trying it out, the temp was tricky and i think i will need to practice a few times but i got one thing from me doing it and watching you was patience with the heat watch it and get it right ta for the tips
i really thought learning an offset was going to be a task. Turns out it's exactly the same as using a weber. Thanks for the tip on warming up the log. i'm convinced i'm buying this CharGriller Pro tomorrow! =)

Hey fella been watched this video since I got my offset a few weeks back very helpful went and got me a inkbird it’s cook day today and I’m half hour in got temps sitting around 290f bloody keen but still nervous as
Hey mate! Don't stress, seriously as long as the temps are between 225-325 you are sweet. If they overshoot, shut your firebox vent a touch and let it ride. You are going to get fluctuations in an offset. Just don't panic, keep that smoke clean burning and enjoy.
Great video. I just tried my 1st smoke over the weekend with my char grill offset but maintaining the temp was a bit difficult. I found myself constantly adding more charcoal and wood splits. I noticed you never once added charcoal. Only wood splits. What am I doing wrong? I also do not have a thermometer to monitor the actual temp as you do, so I know I need one of those. Any suggestions? Thx in advance
I currently have an 8kg ham in my offset smoker. The best X-mas ham ever is done this way. Sure it takes 8..10 hours but you can do for example a salmon for lunch on the side. I put a rye dough coat on my ham. The combination of roasted rye and smoke is something you just can´t beat.
