don’t add vinegar: onion caramelization depends on the breaking down of structural plant starches in the onion, hence onions that are not only sweeter but also softer the Maillard reaction is chemically slowed at lower pH; acids like those found in balsamic vinegar will slow the Maillard browning So if you want caramelized onions without the Maillard reaction for some reason, yeah you could lower the pH with vinegar; but the addition of baking soda or vinegar are each antithetical to one another … if they’re making the onions cook faster, it’s likely they’re just ripping water out of it faster

Having made this after watching I will say I think you add a bit of bacon retention if you layer: Bread Cheese Onion Cheese Bacon Cook with the bacon side up top so you start melting the upper layer of cheese in the process and it glues the bacon to the sandwich.
Yep, it's always awesome. My foster mom didn't make it as good (she was massively overweight & always on the "new diet" - which I was forced to endure, but it was simply called "eggs in toast"
if I was to make it, just put some butter on the pan and swirl it, then put the bread and slowly add all the toppings on while the bread is toasting. Then you don't have to pray and flip it onto the pan. Once one side is done smear some butter or mayo onto the top bun and flip. Cut a hot, dig it out, then add the egg, add a little bit of water then put the lid on
Mom called them gold mines and they were good for breakfast, lunch, or dinner. She used Mayo instead of butter too. Great job Sam-I'm cooking this with ny grand daughters tomorrow.
I do indeed use bacon bits from a bag. For the same reason Sam uses pre-shredded cheese. It's a shortcut. If I don't have time or the energy to make my own, I use bacon bits from a bag.
I'd like to suggest your version of my "bacon wrapped chili meatloaf ". Take that as you will. Or maybe your version of a cheese Frenchy but with peanut butter and chocolate outside? The challenge is set.
