    Quick tip for anyone wanting well caramelized onion but dont want to wait half an hour plus, if you add a bit of either baking soda or balsamic vinegar to the onions it changes the ph levels of the onion which increases the Maillard reaction causing the onions to brown more quickly. It will also help them soften faster. If you have neither of those you can add a bit of sugar as the sugars coming out from the onions naturally is what allows them to caramelize and it simply speeds up the process. SCIENCE!!! Lol

      don’t add vinegar: onion caramelization depends on the breaking down of structural plant starches in the onion, hence onions that are not only sweeter but also softer
      the Maillard reaction is chemically slowed at lower pH; acids like those found in balsamic vinegar will slow the Maillard browning
      So if you want caramelized onions without the Maillard reaction for some reason, yeah you could lower the pH with vinegar; but the addition of baking soda or vinegar are each antithetical to one another … if they’re making the onions cook faster, it’s likely they’re just ripping water out of it faster

      I’ve caramelized a shit ton of onions as a chef. Here are my tried and true tips: Cut your onions fine, salt them while cooking, use a pan with a lot of surface area, start on high heat while the salt leaches the water out. Turn heat down to medium low after they start to look dry and start browning, stir often. If your fond gets too thick, deglaze with water once in a while to loosen it up and mix all that caramelized goodness back in.

    I always add half the American cheese to the sandwich toppings before grilling so its already glued together and keeps from falling out.

    Damn... Hit me with the nostalgia. We used to get these made for us as kids. Nan called them “Eggs in the Nest." Mornings we got up and seen that old shot glass sitting on the kitchen counter we knew immediately what came next. 🥚 🍳 ☀️

    My mom made egg in a hole all the time and I still make it to this day. My husband has never heard of egg in a hole. I made it for him a year ago and he makes it every weekend for breakfast. Now we need to do this! Looks so unhealthy delicious!

    When I was in the military we only had few minutes to eat so I made a toast, hash brown, egg (scrambled or over easy) & breakfast meat (bacon or sausage) sandwich! So awesome and easy & fast to eat.

      Same here. Long story short. Saw it on v for Vendetta back in 2005 when that movie came out. Then a girlfriend cooked it for me around 2014 and instantly remembered I saw this on v for Vendetta. couple years later I've been making them for myself grilled cheese style for a few years now

    I actually tried this concept(without the bacon and onions) about a week ago by making two egg in a holes and then putting the cheese between them to get melty. More yolky egg action, but less cheese.

    I've made breakfast sandwiches on Hawaiian rolls as well as Brioche. In my opinion, both are simply too sweet for a breakfast sand.

    I basically grew up at my grams house, and she called these 'eggs in a pocket' This is the first dish I ever learned to cook. The nostalgia is hitting me hard. .. However we were using a crappy electric stove, not that beautiful beast :(

    i really need one of those flat stoves. super easy to clean and cook up a ton of yummy food.

    Having made this after watching I will say I think you add a bit of bacon retention if you layer:
    Bread
    Cheese
    Onion
    Cheese
    Bacon
    Cook with the bacon side up top so you start melting the upper layer of cheese in the process and it glues the bacon to the sandwich.

    if I was to make it, just put some butter on the pan and swirl it, then put the bread and slowly add all the toppings on while the bread is toasting. Then you don't have to pray and flip it onto the pan. Once one side is done smear some butter or mayo onto the top bun and flip. Cut a hot, dig it out, then add the egg, add a little bit of water then put the lid on

    I do indeed use bacon bits from a bag. For the same reason Sam uses pre-shredded cheese. It's a shortcut. If I don't have time or the energy to make my own, I use bacon bits from a bag.
