Matt: your presentation is awesome. I liked the tip about the added chives. I will try that tomorrow. Have you tried liberally coating the outside with MAYO prior to pan-grilling? The mayo crisps up in a most perfect way. IMO, the mayo-hack improves all grilled sandwiches, no matter how they are grilled.

The biggest reason is in a restaurant we have a bigass flattop grill with plenty of room to use and a consistent temperature. Makes a huge difference in quality.
Plus that griddle has been used to cook eggs, bacon, sausage and hash browns all morning at a restaurant. By lunch time it has a lot of extra flavor. Plus burgers are cooked on it for lunch so you get some of that flavor too.

Cast iron, yes. Chives, cool. Butter, of course. Oven? Not necessary, just put a lid on the pan, medium heat, the cheese will melt and be gooey, plus you'll get a much better crisp on that bread. Pro tip: butter the bread, then sprinkle some parmesan on it before it goes in the pan.
Yep, butter on the grill, then Parmesan, then the bread. I even do my Cubans that way in the panini. Not trad but who cares?

Ive been evolving my grilled cheese for a while, and I'm not quite there, I have adopted some elements over time. Started melting butter with garlic in the microwave and putting that on, and frying it with parmesan cheese on the outside, even the powdered stuff depending what i have. And just adding any cheese on the outside is a good addition, glad yours goes all in on that idea. Mixing the cheeses too has been big. People get so restrictive with it but Im like, what else can I melt on to this damn thing?

Looks great, but if you want your channel to grow, stop the exaggerated ASMR. We’re all over it at this point, it adds no value.
Putting a grilled cheese in the oven is so incredibly extra. Overcomplicating such a simplistic food item that is perfectly fine cooked on a stovetop.
Why is it that there are so many cooks that wear plastic gloves to handle food with, when for centuries people have handled food with bare hands; and since the advent of washing hands people have just washed their hands? I get that at a restaurant you might wear gloves, but even at a restaurant gloves aren’t that sanitary.
