When I was in high school, I would cook breakfast for my dad because I needed to get a ride to school early for [something very nerdy]. He liked poached eggs on toast, because he was trying to cut down on fat. So I never poached eggs for myself, ever, because that's what I thought poached eggs were for--no fat, no flavor. This video opened my eyes, and my taste buds, to new opportunities. The other day, I made my first ever hollandaise sauce (it wasn't your spicy sauce, but I was inspired to do it by this video), grilled some English muffins with garlic butter, and poached eggs for the first time since high school. It was brilliant. Thank you for sharing this video, and thank you for getting me to not cook boring food.

I love doing Bene's like this, but I take cornbread and add Jalapeno's in the mix then cook in a waffle iron, and I like to use leftover Birria taco meat (that Sam taught me how to make) along with the egg (that Sam taught me how to poach) and the sauce. It's amazing!

I love that Sam is constantly putting his own spin on recipes or even creating completely original recipes rather than the majority of cooking youtubers who teach us to make the same old boring classic recipes. for separating the egg whites and yoke, i see ppl use a 20 oz bottle to suck it up and it separates it...i never tried it myself but it seems to work....as always Sam this looks good!

It just makes more sense and you're more likely to end up with everything hot and ready. I think my favorite idea/hack is the thermos for the hollondaise sauce and adding diced jalapeno is brilliant. This is a must fix for me. I love poached eggs and eggs Benedict so this is right up my alley. As for the vinegar, Jacques Pepin uses it. He's were I learned to make them so I'll keep using vinegar in the water. Boom! 🎤 drop!

PERFECT EGG 🥚 🍳: fried sunny 🌞 side up but stick a lid on the pan to steam the egg while frying the bottom. Perfect combo of fried with a running egg and cooked whites.

Tip strain your eggs first(crack in a fine strainer over a jar/glass bowl) to get rid of the watery excess which will elevate you having strands when you poach them

I think I are this in a small mom and pop truck stop on the outskirts of Albuquerque but it had fried jalapeños on it as well,best breakfast sandwich I think I’ve eaten.

You also can separate yolks with a empty plastic bottle. Just hold the open side above the yolk, squeeze and release.
I had chorizo Benedict long ago in Reno...I remember it to this day. Chorizo and eggs is my favorite breakfast still
