Hobo is short for hoe boys. Field workers in the 20's to 50' often traveled by jumping rail road trains to get manual farm labor. True hobos would take no offense in the term. It's a badge of honor and hardship taken proudly. If you're not a hobo you're a bum.

I made these. We're eating them right now. My husband and 15 yo son are *very* happy.
In Texas we dont even know what a Breakfast Burrito is...patato, egg, bacon, cheese and chorizo beans on a reg flour tortilla with some green salsa.
It may not be a Texas thing. I first encontered them at Southern California factory sites, made by the folks in the mornng taco truck...

Its a Texas thing. I was born in Arizona and it was always the breakfast burrito then I moved tio McAllen Texas, and it was breakfast Taco. Other difference is in South Texas its not machaca, its Machacado. Same thing, but different

Max congratulations. You represented all teenage, young, and middle aged men with that “sometimes”. Good man.
When I make hash browns, I use the peeler not the grater. It goes faster, and then you do a quick rough chop. I like the way it cooks, with lots of crunch, but still soft enough to be chewy. And it holds together well for flipping.
Sam and gang, I doubt you will see this but I feel inclined to tell you, I have made several of your recipes or otherwise used them for inspiration for my own dishes. They always turn out great. But, I have to tell you, this is the one recipe I keep coming back to. It is delicious and I make it just as you suggest. BRAVO.
You can use a salad spinner on those shreds, too! Works like a charm!
Years ago... and I mean years ago (like 30), Wendy's used to make a breakfast sandwich. It had ham and egg and cheese and your choice of sausage or bacon on a Texas style Toast for bread. I would put the Wendy's hot sauce on it and it was delicious. I would love to see you do your version of that. I miss that sandwich.

wendy’s has some really good one-off menu items sometimes, the boneless wings from like 2008 were soo good
Breakfast Burritos are mandatory. Add enough egg, cheese and bacon and it's a high protein kick in the ass, no drowsiness involved.

In Cali it's all about the breakfast burrito. Down here in Texas it's all about breakfast tacos. So rest assured the breakfast taco gets love. Both are great, can't go wrong either way.

I made mexican style street tacos for my folks...over 75 years old...and they freaking loved them
i love it! but personally i would like the eggs cooked separately... when ive done this in the past .. it takes away from the crispiness of the hashbrowns... kinda gets mushy.. i like them together but separate .. just my opinion
Breakfast tacos are my go to breakfast! I’ve never really been a sweets for breakfast kinda guy, and once I figured out that I could simply shrink down a breakfast burrito into some taco sized tortillas, my breakfast game changed forever!
I always hated all the tortilla at both ends of a burrito. I should probably swap to tacos, too.

In Texas the breakfast taco is THE go to breakfast food, beside the kolochi, and every gas station even the big chains, carry their version of the breakfast taco. The best breakfast tacos are found in the little taco stands and truck all over. There are drive-thru mom and pop type places that are only open during breakfast hours. I'm in Florida now and miss having access to so many different breakfast tacos that you can find in Texas. My personal favorite is the carne asada, potato and egg. Yummm
